In this spring vlog, I start the morning with gentle snowfall, then head to the kitchen to bake a sweet, sticky date cake perfect for a morning snack. Later, I make three kinds of homemade pickles: celery, carrots, and red cabbage. To finish the day, I cook a comforting noodle soup using leftover pickling vegetables nothing goes to waste! I hope this video brings you a moment of peace and inspiration in your day 💛 🍰Date Cake 🍰 Ingredients: 360g pitted Medjool dates 233 ml hot milk 160g of all-purpose flour 1/2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 egg 1 tsp vanilla extract 150 ml vegetable oil Instructions: 1. Preheat oven (175°C). 2. Cut the pitted Medjool dates into pieces. 3. Over medium heat, pour milk into a pot and bring it to almost boiling, then remove it from the heat 4. Place the dates in a pot and soak in milk for 50 minutes. 5. While waiting for the dates, sift the flour, add baking powder, baking soda and salt, then combine 6. In a food processor or blender, place the dates mixture and blend for about 20 seconds. Add egg, vanilla extract, and vegetable oil, and blend again until well combined, about 10 seconds 7. Pour the date mixture into the dry ingredients and fold together until combined. 8. Grease a 9-inch round cake pan and place a parchment paper at the bottom. Pour the batter into the prepared cake pan. 9. Using a spatula, spread the batter evenly and gently tap the pan to release excess bubbles. 10. Bake for 35 to 40 minutes or until a toothpick inserted into the cake comes out clean 11. Remove the cake from the oven, transfer it to a serving dish, and let it cool for 20 to 30 minutes. 12. Decorate with dusting sugar and slice into your desired portions. 13. Serve and enjoy🍰🍰🍰 💕*** 3 Pickled Recipes***💕 🌱Pickled Celery🌱 Ingredients: 500g celery Handful of dill or 2 tbsp of chopped dill For the Brine: 500ml water 500ml white vinegar 4 tbsp cane sugar 2 1/2 tsp salt 1 tsp white peppercorn 1/4 tsp red pepper flakes/powder Instructions: 1.Cut the celery into 1/2-inch pieces and place into a sterilized jar. 2. Include a handful of dill 3. In a pot, pour water and vinegar, add cane sugar, salt, white peppercorn, and red pepper flakes/powder. 4. Cook over medium heat, stirring occasionally, until the sugar and salt have dissolved. Pour the brine over the celery in the jar. 5. Allow it to cool completely before refrigerating, and consume it within two weeks. Happy Pickling!💕Enjoy!💕 🌱Pickled Carrots🌱🥕 Ingredients: 800g carrots 1 bell pepper (about 70g) 2 medium-sized white onions 3 cloves garlic 50g raisins 3 bay leaves For the Brine: 375ml water 375ml white vinegar 2 tsp salt 60g cane sugar 1/2 tsp ginger powder or 25g fresh ginger Instructions: 1. Julienne cut the carrots 2. Cut the onions and bell pepper into strips 3. Peel the garlic cloves. 4. Combine carrots, onions, bell pepper, garlic and raisins. Place all the ingredients into a sterilized jar 5. In a pot, pour water and vinegar, add salt, cane sugar, and ginger powder or fresh ginger 6. Cook the mixture until boiling, then turn off the heat and let it cool slightly. Pour the brine over the carrots in the jar. 7. Add bay leaves, allow it to cool completely, then refrigerate. Consume within a month. Cut the cabbage and onion into strips, then peel the garlic clove and slice into small pieces 2. Combine cabbage, onion and garlic, then place all the ingredients into a sterilized jar 3. In a pot, pour water and apple cider vinegar. Add spiced salt, cane sugar, and cumin seed. 4. Cook the mixture over medium heat and simmer it until the sugar and salt dissolve completely. 5. Pour the brine over the cabbage mixture in the jar. Allow it to cool completely, then refrigerate. Consume within 2-3 weeks.
