Gingerbread Cutout Cookies “The smell of these cookies always makes me think of going to Grandma’s house. My boys like to linger around the kitchen when I make them.” — Christy Thelen, Kellogg, IA Prep Time 30 minutes + chilling Bake Time 10 minutes per batch + cooling Yield Makes about 5 dozen cookies --- Ingredients ¾ cup butter, softened 1 cup packed brown sugar 1 large egg, room temperature ¾ cup molasses 4 cups all-purpose flour 2 teaspoons ground ginger 1½ teaspoons baking soda 1½ teaspoons ground cinnamon ¾ teaspoon ground cloves ¼ teaspoon salt Vanilla frosting of your choice Red and green paste food coloring --- Instructions 1. In a large bowl, cream the butter and brown sugar until light and fluffy, about 5–7 minutes. Add the egg and molasses and mix well. 2. In a separate bowl, combine the flour, ginger, baking soda, cinnamon, cloves, and salt. Gradually add the dry ingredients to the creamed mixture, mixing well. Cover and refrigerate until the dough is easy to handle, about 4 hours or overnight. 3. Preheat the oven to 350°F. On a lightly floured surface, roll the dough to ⅛-inch thickness. Cut with floured 2½-inch cookie cutters. Place cookies 1 inch apart on ungreased baking sheets. 4. Bake until the edges are firm, 8–10 minutes. Remove cookies to wire racks and cool completely. 5.
