Cook Delicious Pasta the Healthy Way! (No Egg, No Butter, No Cheese)

Join the Earthy Goodness Kitchen Community:   / earthygoodnesskitchen   ------------------------------- RECIPES IN VIDEO: Super Green Pasta Serves 2 Ingredients: 100g fresh or frozen greens (Spinach, kale, rocket etc) (If frozen defrost in boiling water) 80g frozen peas (defroted in boiling water) 1 handful of fresh basil 100ml plant milk ½ tsp miso 2 tbsp nutritional yeast (8g) 2 medium cloves of garlic 1 pinch sea salt Black pepper to taste 1 pinch of nutmeg 200g dried pasta Method: Cook the pasta as per the packet instructions. I prefer it al dente so cook it for 1-2 minutes shorter than the pasta suggests. Drain the pasta over a bowl to keep some of the pasta water. Add the pasta back into the saucepan. In a blender add all the other ingredients plus 50-80ml of pasta water and blend until smooth. If your blender is not appropriate for hot sauces then add the pasta water to the pan afterwards. Pour the green sauce over the pasta and mix to combine. If the sauce is a little runny for your liking, heat over a medium flame and cook for a couple minutes stirring regularly until the sauce thickens. Hidden veggie tomato sauce Serves 2 Ingredients: 1 tbsp olive oil 1 onion, finely chopped ½ medium courgette, grated ½ medium carrot, grated 1 tsp dried thyme and oregano 2 cloves garlic, zested 1 can chopped tomatoes 1 tsp balsamic vinegar 1 tsp marmite, soy sauce or tamari ½ small bunch basil Method: Heat up the olive oil in a medium saucepan over a medium heat. Once hot add in the onion, courgette, carrot and celery. Cook gently for 10 minutes until nearly softened. Add the garlic and cook for another 1-2 minutes stirring regularly. Add the chopped tomatoes plus 100ml water to wash out the can, balsamic vinegar and marmite. Place a lid on top slightly ajar and simmer gently for 10-15 minutes. Taste and adjust seasoning then stir through the fresh basil. Pasta Salad Serves 2 Ingredients: 200g dried pasta, cooked as per packet instructions and cooled 100g cherry tomatoes, sliced into halves 1 red pepper, diced 50g olives, sliced 40g rocket 30g toasted nuts (Pinenuts, flaked almonds, hazelnuts or cashews) Half can white beans or 100g cooked green lentils, rinsed (optional) ½ small handful basil and parsley, finely chopped Dressing: 60ml olive oil 1 lemon, zest and juice 1 tsp dijon mustard 1 tbsp plain vegan yoghurt (optional) 1 tsp italian dried herbs Method: For the dressing add all ingredients to a jar and shake to emulsify. Add all salad ingredients to a bowl and mix to combine, dressing the salad dressing and enjoy. Creamy mushroom pasta Serves 2 Ingredients: 200g dried spaghetti 200g white or chestnut mushrooms, sliced 2 cloves of garlic, minced 1 small handful fresh parsley For the sauce: 50g raw cashews (Soaked overnight in cold water or in boiling water for 2 hours) 100g firm tofu 200ml plant milk ¼ tsp black salt or regular salt 2 tsp nutritional yeast Method: Add all the sauce ingredients to a blender and blits until smooth and set aside. Heat a large frying pan over a medium heat (ideally high sided) and add 1 tbsp olive oil. Add the mushrooms and cook for 5 minutes or until starting to caramelised, turn down the heat and add in the minced garlic and cook for another 3 minutes. Add in the parsley and season generously with black pepper. While the mushrooms cook, cook the spaghetti until al dente (still has a slight bite), keeping back a little pasta water to loosen the sauce if needed. Pour the cashew/tofu sauce into the mushroom pan and bring to a simmer. Add in the pasta and toss to coat.
