#백종원 #치킨스테이크 #집밥백선생 설명이 필요 없는 바삭하고 고소한 맛! 오늘의 메뉴는 집밥 백선생 시즌 1 9화에 소개되었던 치킨 스테이크입니다. 뼈를 발라낼 필요가 없어 아~주 쉽습니다~! ==================================================== 치킨스테이크 [재료] *스테이크 재료 닭 다리살 400g 소금 2g 후추 2g 마늘 11개(120g) 감자 1개(150g) 양파 1개(130g) 버터 1.5큰술(25g) *스테이크소스 재료 버터 1큰술(10g) 간 마늘 1/2큰술(10g) 간장 1/4컵(40g) 식초 3큰술(20g) 설탕 1/2컵(45g) 물 1/2컵(90g) 후추 약간 [만드는 법] *스테이크 만드는 법 1. 닭 다리 살은 키친타월을 이용하여 핏물을 제거하고 살 쪽에 소금, 후추 밑간하여 준비한다. 2. 양파는 1cm 두께로 썰어 1/2크기로 자르고 감자는 0.5cm 정도로 편 썬다. 3. 마늘은 꼭지를 제거하여 준비한다. 4. 닭 다리 살 껍질 부분을 팬에 닿게 올리고 중불에서 튀겨지도록 익힌다. 5. 닭기름이 나오기 시작하면 불을 약하게 줄인다. 6. 프라이팬에 기름이 자작하게 생기면 감자, 마늘을 넣고 뚜껑을 덮어 익힌다. 7. 감자가 절반 정도 익었을 때 양파를 넣고 익힌다. 8. 구운 감자, 구운 마늘을 접시에 옮겨 담는다. 9. 구운 양파의 1/2개를 접시에 옮겨 담고 나머지 1/2개는 가위를 이용하여 잘게 자른다. 10. 닭 다리 살의 껍질 부분이 바삭하게 튀겨지면 기름을 절반 정도 닦아낸 후 버터 1 큰 술을 두르고 뒤집어 준다. 11. 닭고기가 다 익으면 완성 접시에 옮겨 담는다. 12. 구운 채소, 스테이크 소스를 곁들이고 스테이크 위에 버터 1/2 큰 술을 올려 마무리한다. *스테이크 소스 만드는 법 1. 닭 다리살 구운 팬에 남아있는 양파, 버터 1 큰 술, 간 마늘을 넣고 볶아준다. 2. 마늘향이 올라오면 간장, 설탕, 식초, 물, 후춧가루를 넣어 중 불에서 농도나게 끓인다. Chicken Steak [Ingredients] *Steak Chicken leg 400g Salt 2g Black pepper 2g 11 cloves of garlic (120g) 1 potato (150g) 1 onion (130g) 1.5 tbsp of butter (25g) *Steak sauce 1 tbsp of butter (10g) 1/2 tbsp of crushed garlic (10g) 1/4 cup of soy sauce (40g) 3 tbsp of vinegar (20g) 1/2 cup of sugar 45g) 1/2 cup of water (90g) A pinch of black pepper [Recipe] *How to cook chicken steak 1. Remove blood from the chicken meat using a paper towel. Season the meat part with salt and black pepper. 2. Chop the onions 1 cm thick into halves and cut the potatoes into slices 0.5 cm thick. 3. Trim the ends of the garlic cloves. 4. Place the chicken meat skin-side down on a frying pan and cook over medium heat as if frying. 5. When the chicken fat starts to ooze out, reduce to low heat. 6. When the fat starts to cover the surface of the pan, add potatoes and garlic. Cover with lid. 7. When the potatoes are halfway cooked, add the onions. 8. Remove the cooked potatoes and garlic onto a plate. 9. Place the half of the cooked onions on the plate, and use scissors to cut the other half into smaller pieces. 10. When the chicken skin becomes crispy, soak up half of the fat. Add 1 tbsp of butter and flip the meat over. 11. When the chicken is finished cooking, place it on the plate. 12. Add grilled vegetables and steaks sauce. Top the steak with 1/2 tbsp of butter as the finishing touch. *How to make the steak sauce 1. On the same frying pan used to grill the chicken, stir-fry the remaining onions, 1 tbsp of butter, and crushed garlic. 2.
