The millionth Wellington tells the story of culinary perfection done right. 🥩 GORDON RAMSAY’S CLASSIC BEEF WELLINGTON RECIPE INGREDIENTS For the beef: • 1 center-cut beef fillet (about 1 kg / 2.2 lb) • Sea salt and freshly ground black pepper • Olive oil, for searing • 2 tbsp Dijon mustard For the mushroom duxelles: • 700 g / 1.5 lb flat-cap mushrooms, finely chopped • 2 tbsp olive oil • 1 sprig thyme (leaves only) • Salt and pepper For wrapping: • 6–8 slices Parma ham • 2–3 thin savory crêpes (chives & thyme optional) • Plastic wrap (cling film) For the pastry: • 500 g / 1 lb puff pastry, rolled thin • 2 egg yolks, beaten (for egg wash) • Rock salt & thyme sprigs for garnish INSTRUCTIONS 1. Prepare the Beef • Bring fillet to room temp (10–15 min). • Season generously with salt and pepper. • Heat a cast-iron pan until smoking, add oil, and sear each side for about 60 seconds, including ends. • Remove and brush immediately with Dijon mustard while warm. Let rest. 2. Make the Mushroom Duxelles • Sauté finely chopped mushrooms with thyme in olive oil. • Cook until all moisture evaporates and it becomes paste-like. • Season and let cool completely. 3. Assemble the Layers • On plastic wrap, lay crêpes slightly overlapping. • Cover with Parma ham, then spread a thin layer of mushroom duxelles. • Place mustard-coated beef in the center and roll tightly into a cylinder. • Twist ends and chill 20 min (or freeze 5 min). 4. Wrap in Puff Pastry • Roll out puff pastry on a floured surface. • Remove beef from wrap, place on pastry, and brush edges with egg yolk. • Season lightly, roll tightly, and seal the seam underneath. • Twist ends, brush entire surface with egg wash, and chill 5–10 min. 5. Bake • Lightly score the top for decoration. • Sprinkle with rock salt and press thyme sprigs on top. • Bake at 190 °C / 375 °F for 18–20 minutes, until golden brown. • Rest 5 minutes before slicing. TO SERVE Slice cleanly. The pastry should be crisp and golden, the beef pink and tender.
