Ingredients Aromatics ¼ cup diced carrot ¼ cup diced red onion ¼ cup diced celery 1 tablespoon garlic paste (or 2 cloves, minced) Beans & Liquid 3 cans black beans (about 15–16 oz each), divided 3–3½ cups chicken stock (use vegetable stock for vegetarian) Seasonings 1 teaspoon red pepper flakes (optional) 1 teaspoon dried oregano 1 teaspoon paprika 1–1½ teaspoons ground cumin 1 tablespoon fresh lime juice Kosher salt, to taste Black pepper, optional Herbs & Finish 2 teaspoons fresh cilantro, chopped (divided) Fresh lime wedges (for finishing) Diced red onion (for garnish) Sour cream (optional topping) Fat Extra-virgin olive oil Method 1. Build the First Layer Heat a heavy-bottomed pot or Dutch oven over medium-high heat. Add olive oil, then carrots, onion, and celery. Season lightly with kosher salt and black pepper.
