Turkey, over 5 years and multiple trips, has taught me that food here is a way of life. Every region, city and village has its own recipes, its own dish. Their food is a part of their identity. I’m in Istanbul. Not the capital of Turkey, but certainly one of histories most important cities. Istanbul, formerly known as Constantinople is where east meets west. This is where we start the journey but soon we’ll cross the turqiouis waters of the Bosphorus and dive deep into Anatolian Asia. Of the many foods the Turk’s are proud to call theirs’. There may not be one more symbolic than the Turkish delight.
