To a pot, add in a drizzle of oil along with chopped onions and some minced garlic. Sauté on medium low for 2 minutes or until soft and fragrant. 2. Add in the chopped beets along with some brown sugar, vinegar, and all the spices. Let simmer for 1 - 2 minutes. 3. Pour all of the contents into a blender and blend until you have a smooth ketchup like mixture. 4. Pour the beet ketchup into a squeeze bottle and keep in the refrigerator until ready to use!
