The exotic taste of the Philippines. Hearty Comfort Meals presents Lechon Kawali, a lovely dish of savory combinations of pork belly & sweet coconut rice. Prep time: 15 minutes Refrigeration time: 12-24 hours Cooking time: 3-4 hours Total cook time: 4.5 hours Author: Chef Rolo Recipe type: Main Entrée Serves: 4-6 Hungry People 📌Ingredients: 3lbs Pork Belly Killer Hog Hot BBQ Rub Salt 2 cups Rice 1 ½ cup Coconut Water Olive Oil 1 Tomato 1 Onion 1 Cucumber Carolina Mustard BBQ Sauce Fresh Chopped Parsley 📌Instructions: 1. Display the pork belly on a cutting board and shake a generous amount of Killer Hogs Hot BBQ rub onto the meaty side 2. Put the pork belly onto a tray, bottom side up. We don’t want to burn any of the rub on the fat cap of the belly while frying (because the BBQ rub contains sugar, and sugar burns) 3. Cut the fat cap to make cube-like angles about a quarter inch deep into it, where the fat cap joins the meat 4. Apply a generous amount of salt onto the fat cap. Ensure to get the salt in between the cracks and crevices to allow the moisture of the fat to render out 5. Marinade and place the pork belly into the refrigerator for about 12 to 24 hours 6. After sitting in the fridge for about 12-24 hours (depending on your availability), check the pork belly and dry the excess moisture with a paper towel to give it that crispier texture after it has been cooked 7. Now place the pork belly into the smoker at 250 degrees for approximately 3 to 4 hours (you want the internal temp to come out at around 195 degrees) 8. While waiting for the pork belly in the smoker to cook, make coconut rice. 9. In a pot, put 2 cups of rice in the rice cooker 10. Wash the rice by swishing it around with water 11. Drain the water and repeat the process 3 times (we want to get all the carbs off of the rice) 12. After draining the water thoroughly, pour coconut water into the cooker 13. Measure the top layer of the rice to the top of the water level so that there's about a one inch space between the top of the liquid and the top of the rice. To better measure this, place your middle finger on top of the rice and try to get the liquid leveled to the first line of your finger (that is about a cup and half to 2 cups of the Kirkland brands coconut water) 14. Turn on the rice cooker and wait for the rice to be completed 15. After 4 hours in the smoker, check the temperature of the pork belly and it should be right around 195 degrees or poke the meatiest part and see if it’s tender like butter with your thermometer 16. Pour all the grease from the pork back into the pan and add olive oil until the bottom of the pan is fully covered, about 1/4 quarter inch 17. Put the pan onto medium-high heat 18. Place the pork belly fat side down onto the oil and let it start to sizzle 19. Once the oil and pork belly start to sizzle, crank the heat up to medium-high heat to bring the oil temperature hotter, which will give us that amazing crisp and crunch to the fat cap part of the pork belly. 20. After 10 to 12 minutes, remove the pork belly from the pan and let it sit for about 10-20 minutes so that the juices are equally distributed throughout the meat. 21. Cut the pork belly into cubes and plate it with rice, tomatoes, onions, cucumbers, and Carolina Mustard BBQ sauce on the side. 22.
