Most home cooks don’t own such an oven. The same is true in Italy where, excepting the occasional hobbyist, home cooks instead tend to make “ Pizza in Teglia ” a pan pizza that is much easier to master and requires no special equipment whatsoever. It’s delicious and has a ton of advantages over homemade Neapolitan Pizza such as being able to easily feed a crowd. Pizza dough is one case where fairly precise measurements are useful because of the importance of the hydration ratio. While we’ve given volumetric measurements below This quick and easy Pizza in Teglia ( Italian sheet pan pizza) recipe produces a high-hydration, soft-on-the-inside, and crispy-on-the-bottom crust in about 3 to 4 hours. It uses a "direct dough" method, making it perfect for a same-day weeknight dinner without needing a long, overnight ferment.  Ingredients ( For one 30x40 cm / 12x16 inch tray ) Flour : 700g ( Type 00 or All-Purpose flour, or a mix of 400g bread flour + 300g all-purpose ) Water : 350g - 400g ( tepid / warm ) Yeast : 4g-7g of Fresh Yeast Salt : 25g Olive Oil for oiling the pan Toppings : 400g San marzano tomato , 350g - 400g mozzarella , olive oil, basil  Instructions 1. Prepare the Dough ( 20 min ) Mix Ingredients : Add the 2/3 of Flour to a large mixing bowl and Sprinkle the fresh yeast directly to the Flour and Mix adding litte bit of water at a time until until a rough dough forms. Add Salt :  Add the salt at the end of the mixing and Knead the dough on a flat surface for about 5 -10 minutes until it is smooth, soft, and elastic. Add Sprinkles of flour if you need any. 2. Rising the dough ( 3 - 4 hours ) Place the dough in a greased bowl, cover it with plastic wrap or a damp cloth, and let it rise in a warm place until doubled in volume ( roughly 3 to 4 hours ).  3. Pan Preparation & Second Rising ( 30 minutes ) Oil the Pan: Liberally coat a 30x40 cm (12x16 inch) baking tray with olive oil. Spread Dough : Transfer the dough to the tray. Gently press and stretch it with your fingertips to fill the pan, being careful not to tear it. If it resists, let it rest for 5 minutes and try again. Second Rise : Cover the pan and let the dough rise again for about 20 minutes.  4. Season & Bake ( 25-30 min ) Preheat: Preheat your oven to the maximum temperature, ideally 250°C ( 480°F ) or higher. Initial Topping : Spread the tomato sauce over the dough. Add Mozzarella : Add the mozzarella and spred it evenly and optionally you can grate some parmigiano Reggiano cheese to extra flavour and crust. set your Oven to 220°C - 240°C Bake on the lowest rack for 20 –25 minutes until the cheese is melted and the crust is golden.  Tips for Success For Crispy Base : Use a blue steel pan if possible, or ensure your oven is extremely hot. Don't Rush: Allowing rise in the pan is essential for a light, airy texture.
