It takes an entire day to clean and process it. But once the beef skin is properly prepared, it can be used to make a lot of delicious dishes. Combined with Yunnan wild chive roots, it creates a flavorful Wa-style dish that's both spicy and refreshing—impossible to stop eating. Fried beef skin and beef skin jelly are the most popular ways Yunnan people enjoy beef skin, and they're perfect for pairing with rice. I originally planned to deep-fry a batch of crispy beef skin, but it was a failure.
