Perfekt gekneteter Pizzateig mit einer super Glutenstruktur! 🔥 Das Rezept zum Nachmachen: 48 h Teig Für 16 Ballen á 280g 2.612g Mehl 1.828g Wasser 6g Frischhefe, 3g Trockenhefe oder 12g Adam Lievito Madre 78g feines Meersalz Ergibt 4.525g Hauptteig Für die Gare lassen wir den Teig bei Raumtemperatur 1 Stunde in der Stockgare nach dem Kneten, dann 44 Stunden im Kühlschrank und anschließend 4 Stunden bei Raumtemperatur gehen vor dem Backen. 📅 Ab 8.
