Distillation style: Double distillation with a stripping run and spirit run. Yeast nutrient – optional - https://amzn.to/3OOcYA3 DADY yeast - https://amzn.to/3T34qYQ Old rum dunder/muck – add 1-2 liters per boiler run for the stripping runs 1. Dissolve the sugar in water, cool to 80F, then add the pineapple skins and yeast nutrient and allow it to ferment for at least 1 week. Check the gravity. If it has not finished down to 1.000, add DADY and give it another week to finish fermenting. Add yeast nutrients if sluggish after 24 hours. 2. If you have some funky rum dunder/muck, add 1-2 liters per 40L of wash to the boiler for each stripping run to boost esterification. Collect all low wines. 3. Spirit run low and slow. Proof down to 55% and age in a BadMotivator barrel for 1-3 years.
