Place them in a plate or cooking tray and "slot" your bay leaves and minced garlic between each slice. Toss in the rest of your herbs, olive oil, and season well. Roast for 50 mins – 1 hr until the potatoes are tender throughout and the tops are golden and crisp. Baste with any oil in the pan halfway cooking to get extra crisp potatoes. In the meantime, mash the avocados to a purée (I like bits left over), add a few herbs, about 2 tbsp of olive oil, salt, pepper (and lemon if you'd like). When the potatoes are cooked, spoon the avocado sauce over the top and serve immediately.
