In this video, I try roasting a whole chicken using a different method than my usual and see how it turns out, adjusting as I go and fixing things in real time. I also make a simple dessert with pound cake, custard, and cooked berries to turn it into a full, comforting meal without overcomplicating anything. For the chicken, I start with a whole bird seasoned simply with salt, pepper, oil, and herbs, then roast it uncovered until cooked through and golden. One of the biggest challenges was getting the skin to brown properly, so I talk through what actually helps when roast chicken looks pale, including drying the skin, adding enough fat, increasing the oven temperature near the end, and using a quick broil if needed. Pat the chicken very dry with paper towels. Season generously with salt and pepper inside and out. Rub olive oil or butter all over the skin, including the back. If possible, gently loosen the skin over the breast and season lightly underneath. Place herbs, garlic, and bay leaves loosely into the cavity. Roast the chicken breast-side up in a roasting pan, uncovered, until the thickest part of the thigh reaches 165°F and the skin is golden, about 45–60 minutes depending on size. Let rest 10 minutes before carving. If the chicken isn’t browning, make sure the skin is dry, add a little more oil or butter, increase the oven temperature to 450°F for the last 10 minutes, or finish under the broiler for 2–4 minutes while watching closely. ⸻ Cake, Custard, and Berries Dessert Cake options: Pound cake (recipe below) OR Regular yellow cake (store-bought or homemade) Simple Pound Cake Ingredients: 1 cup unsalted butter, room temperature 1 cup sugar 4 large eggs, room temperature 1½ cups all-purpose flour ½ teaspoon salt 1 teaspoon vanilla extract Method: Preheat oven to 325°F. Cream butter and sugar together until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla. Whisk flour and salt together, then mix into the batter just until combined. Pour into a greased loaf pan and bake for 60–70 minutes, until a toothpick inserted in the center comes out clean. Cool completely before using. Custard ingredients: 2 egg yolks ½ cup milk or evaporated milk (or ¼ cup evaporated milk + ¼ cup water) 2 tablespoons sugar Pinch of salt ½ teaspoon vanilla extract Custard method: Heat the milk with a pinch of salt until steaming but not boiling. Whisk egg yolks and sugar together until smooth. Slowly whisk the hot milk into the yolks, then return everything to the pan. Cook on low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon. Remove from heat and stir in vanilla. Berry topping ingredients: Frozen berries (strawberries or mixed berries) Sugar, to taste Berry method: Cook berries with a little sugar over medium heat until broken down and jammy. Let cool slightly. Assembly: Crumble pound cake or yellow cake into a bowl. Spoon warm custard over the cake, then top with the cooked berries. Serve warm or at room temperature.
