蒜子雞髀粉絲煲： 材料： 急凍雞髀2隻 冬菇仔5隻 綠豆粉絲4兩 乾蔥頭5個 蒜頭6粒 薑10片 蔥1棵 處理： 1. 急凍雞髀，清水解凍15分鐘。 2. 雞髀，切一舊舊。 3. 雞髀件，用粗鹽乸10分鐘，去除雪味、腥味及加入鹹味。 4. 雞髀，清水沖洗乾淨，用廚紙索乾。 5. 雞髀調味： a. 胡椒粉1茶匙 b. 黑椒粉半茶匙 c. 雞粉半茶匙 d. 生抽1湯匙 e. 蠔油1湯匙 f. 油1湯匙 g. 糖半茶匙 h. 生粉1湯匙 撈勻，醃5分鐘。 6. 綠豆粉絲，清水浸軟。 烹調： 1. 中火在鑊中燒熱油2湯匙。 2. 爆香蒜頭及乾蔥頭。 3. 轉中慢火炸透。 4. 加油1湯匙，繼續炸。 5. 加入冬菇爆香，煮1分鐘。 6. 轉大火，加入雞件。 7. 煎了1分鐘，反轉雞件，繼續煎。 8. 又煎了1分鐘，加入清水400毫升，冚蓋煮滾。 9. 另一邊，慢火燒熱煲仔。 10. 加入薑、蔥炒香，冚蓋。 11. 雞件已滾起，加入綠豆粉絲煮熱。 12. 所有材料倒入煲仔，首先放綠豆粉絲，然後放其他材料。 13. 轉大火煮滾煲仔。 14. 加入芫荽粒及辣椒粒，完成，可享用。 Chicken leg claypot with garlics and mung bean vermicelli: Ingredients: Frozen chicken legs 2 Nos. Mushrooms 5 Nos. Mung bean vermicelli 4 taels Shallots 5 Nos. Garlics 6 Nos. Ginger 10 slices Green onion 1 No. Preparation: 1. Frozen chicken legs, defrost with tap water for 15 minutes. 2. Heat up oil 2 tbsp at medium flame in wok. 2. Fry garlic and shallots well. 3. Turn to medium~low flame, continue frying. 4. Add oil 1 tbsp, continue frying. 5. Put mushrooms, fry for 1 minute. 6. Turn to high flame, put chicken pieces. 7. Flip over chicken pieces after 1 minute, continue frying. 8. Add water 400ml after frying for 1 minute. Cover up the wok and wait for boiling up. 9. Heat up a pot at low flame on the other side. 10. Fry ginger and green onion well in pot. Cover it up. 11. Chicken has been boiled up, put mung bean vermicelli and wait for cooking well. 12. Pour everything into pot. Put the vermicelli first, then the other ingredients. 13. Turn to high flame, wait for boiling up the pot. 14. Put coriander and chili cubes. Complete.
