Bakers yeast was not readily available in Ireland, so they used the bicarbonate soda (baking soda), mixed with buttermilk in order to bake their breads. When you mix baking soda and buttermilk, a chemical reaction occurs that produces carbon dioxide gas. This reaction is known as acid-base or neutralization reaction. Buttermilk contains lactic acid, which reacts with the alkaline baking soda (sodium bicarbonate) to produce carbon dioxide gas bubbles. It is these bubbles that help the dough rise and give baked goods their light and fluffy texture. Don't mix too hard, we're not trying to form any gluten structure. -Once ingredients are mixed well, turn the dough out onto a lightly dusted work surface. -Start by shaping the dough into a log, then form into a 1 1/2" (3.8 centimeters) tall round boule. -Transfer onto a parchment lined baking sheet. -Lightly glaze the top and sided of your loaf with the remaining buttermilk. -Add rolled oats to the top of the loaf. -Place on the middle rack in the oven at 425°F (220°C) for 15 minutes. -Reduce temp. to 400°F (200°C) for an additional 30 minutes, or until golden brown crust. -Remove from oven, place. onto a cooling rack for at least 1 hour or room temperature, as the bread is still cooking.
