This Method was adapted from a recipe we originally learned 4 years ago from Ben Starr the @ultimatefoodgeek His stuff is awesome, you should totally subscribe to his channel! -- No Babysitting your starter, feeding it everyday and doing float tests to see if it's active enough to bake! -- No Discarding (Wasting!) Starter EVER! -- No Levain/Feeding it and waiting hours for it to be active enough to use! -- No time and effort wasted doing an Autolyse! -- No time and effort spent Kneading! -- No Endless Stretch and Folds for hours on end! -- No Cold Retard in the refrigerator overnight! -- No Pre-Heating Your Dutch-Oven at 500 Degrees for an hour! Literally, just about every complicated step that people tell you you "Need" to do can be completely skipped when you follow this 10 Minute Sourdough Made Easy Method! Dough Recipe (60% Hydration) 4.1 oz (116g) Starter 12.2 oz (345g) Water 1 lb 4 oz (566g) AP or Bread Flour 0.7 oz (20g) Salt Dough Instructions Use Starter Flat, Cold, Hungry, Straight from the fridge (No "Active" Starter Required!) Mix Starter, Water, Flour and Salt together ultil all flour is wet (No Kneading Required!), then cover and go to bed! (Really! NO Stretch and Folds Required!). Bulk Ferment 12-18 hours depending on temp in your kitchen. Form loaf and let proof for 60-90 Minutes. Baking Instructions Score and move into Cold Dutch Oven Place in Cold Oven (No Pre-Heating Required) with cookie sheet holding 4 Cups of hot Water on rack below. Start Oven, Set Temp to 425. Bake 58 Minutes. Remove Lids Bake Additional 12 Minutes/Until Desired Crust Color is Reached. Let Cool and Enjoy! Follow this Method and you'll have an amazing loaf of delicious Sourdough with under 10 minutes of actual effort!
