Add vegetable oil, lemon zest and lemon juice. Mix again. Sift flour and baking powder into the bowl, then combine until smooth. Pour the batter into a 20×30 cm baking dish. For the filling, dice the apples. Melt butter in a pan, add brown sugar and caramelize. Add the apples and cook until soft and golden. Add cinnamon and black raisins, cook for another 2–3 minutes.
