Hidden in a quiet, unassuming street in the Nihonbashi District of Tokyo, lies the best sushi restaurant in the world. Considered by many enthusiasts across the globe as the absolute pinnacle of Edomae sushi, Nihonbashi Kakigaracho Sugita is one of the most impossible reservations to book. With wait times ranging from months to even years, sushi lovers consider even achieving a single visit to this restaurant a holy grail. But despite the numerous accolades bestowed upon him and his restaurant, Chef Takaaki Sugita is an extremely humble, calm, and extremely passionate individual. Every single thing he and his team of 4 young apprentices does from morning until night has deep meaning, no matter how mundane or insignificant the task may be. From expertly breaking down tuna, salting and aging his signature gizzard shad, or even simply cleaning his fridge, he treats everything and everyone with mutual respect - perhaps that's why his sushi is as cherished as it is. I had the absolute honor of being invited to capture his story, and I am very humbled to be allowed to film such a wonderful, talented, and humble group of people.
