In this episode, we are in the beautiful village of Geraci Siculo, nestled in the mountains of the Madonie Park. We meet 91 years old Antonietta and her 94-year-old husband Giuseppe, a dedicated farmer and cheesemaker. We had the pleasure of visiting their beautiful citrus grove, and honestly, I could’ve stayed there all day. It was a paradise of citrus, and I couldn’t leave without bags full of different varieties of oranges—truly a dream come true. I even brought a lemon home to see if I can grow it in my garden back in Marche! Antonietta shares her recipe for taglierini with beans, Let’s dive in! For the Pasta: 300g Semola Rimacinata (Durum wheat flour) 20ml Tepid water For the Sauce: 1 bunch Wild fennel 2 Cardoons (trimmed and sliced) 2 Bay leaves 400g monachedda beans (or substitute with borlotti or cranberry beans) 2 tbsp Olive oil Freshly ground black pepper (to taste) Buon appetito, e grazie Antonietta, Giuseppe and Pietro!
