کباب کوبیده از غذاهای ایرانی پر طرفدار هست و امروز میخوام این کباب رو با تمام راز هاش از جمله نریختن از سیخ و نسبت درست مواد و به سیخ کشیدنش رو بهتون آموزش بدم. همیشه وقتی ایران بودم کوبیده هر جایی رو نمیخورم چون همه جا نمی تونستن خوب در بیارن ولی با این روش یک کوبیده با کیفیت و لطیف خواهید داشت. مواد لازم برای ۱ کیلو مایع کوبیده سردست گوساله: ۵۰۰ گرم قلوه گاه گوسفند: ۵۰۰ گرم تفاله پیاز: 200 تا 300 گرم نمک: ۱۲ گرم یا ۳ قاشق چای خوری فلفل سیاه: نصف قاشق چای خوری کره و زعفران به مقدار لازم مواد لازم برای نیم کیلو مایع کوبیده سردست گوساله: ۲۵۰ گرم قلوه گاه گوسفند: ۲۵۰ گرم تفاله پیاز: 100 تا 120 گرم نمک: ۶ گرم یا یک و نیم قاشق چای خوری فلفل سیاه: نوک قاشق چای خوری کره و زعفران به مقدار لازم Beef shoulder: 500 gr Lamb ribs: 500 gr Waterless onion:200 300 gr Salt: 12 gr Black pepper: 3 gr Butter and saffron نکات ۱: مایه کوبیدتون رو بزارید کامل سرد شه برای سیخ کشیدن. ۲: سعی کنید قبل چرخ کردن بزارید یک بار گوشتتون یخ بزنه. ۳: نسبت گوشت ها و مخصوصا نمک و تفاله پیاز رو رعایت کنید. ۴: پیاز رو کامل آب بگیرید و ۳ ساعت داخل یخچال استراحت بدید. ۵: اگر بتونید کمی مقدار تفاله پیاز رو اضافه کنید کباب نرمتر و لذیذ تر خواهید داشت فقط مراقب به سیخ کشیدن باشید. ۶: با صبر و حوصله به سیخ بکشید. ۷: حتما تا ۵ دقیقه اول پخت تند تند پشت و رو کنید کباب ها رو. ۸: کره زعفرون رو روی حرارت مستقیم زغال نزارید. #کوبیده #کباب #کباب_کوبیده #کوبیده_رستورانی #چلوکباب
