#백종원 #소갈비찜 #한식 생각보다 어렵지 않은 '소갈비찜' 레시피입니다. 올 추석에는 가족들을 위해 소갈비찜을 직접 만들어 보는 건 어떠신가요? ================================================== 소갈비찜 [재료] - 갈비양념 - 진간장 1과1/3컵 (260g) 황설탕 2/3컵 (100g) 맛술 2/3컵 (120g) 물 1과1/3컵 (240g) 간 마늘 1/4컵 (40g) 간 생강 2/3큰술 (10g) 대파 2/3컵 (50g) 참기름 4큰술 (30g) 후추 1g - 갈비찜재료 - 갈비 2kg 대파 3대 (160g) 새송이버섯 2개 (50g) 양파 2개 (370g) 청양고추 3개 (20g) 꽈리고추 5개 (20g) 홍고추 2개 (20g) 당근 1개 (230g) 무우 1/3개 (360g) 표고버섯 2개 (50g) 물 1L [만드는 법] 1. 갈비를 찬물에 담가 한나절 정도 핏기를 제거한다. 2. 대파는 반으로 갈라 송송 썰어 준비한다. 3. 진간장, 황설탕, 맛술, 물, 다진 마늘, 한 생강, 대파, 참기름, 후추를 섞어 갈비양념을 만든다. 4. 새송이버섯은 밑동을 정리한 후 1cm 정도 두께로 썰고 표고버섯은 모양을 내거나 1/4크기로 잘라준다. 5. 양파는 뿌리를 제거하고 1/4크기로 자르고 무는 1/8 정도 크기로 잘라 모서리를 정리한다. 6. 당근은 깨끗하게 세척한 후 1cm 정도 두께로 자르고 대파는 2~3cm 정도 통으로 썰어 준비한다. 7. 청양고추, 홍고추, 꽈리고추는 크기에 따라 1/2이나 1/3 크기로 자른다. 8. 핏기가 제거된 갈비는 물에 깨끗하게 헹궈준다. 9. 냄비에 갈비, 갈비양념, 물 1L를 넣어 끓으면 중불로 줄여 1시간 정도 끓인다. 10. 갈비가 부드럽게 익으면 무를 넣어 끓인다. 11. 무가 절반 정도 익으면 당근, 표고버섯, 새송이버섯을 넣어 익혀준다. 12 모든 채소가 익으면 양파를 넣어 익힌다. 13. 청양고추, 꽈리고추, 홍고추를 넣고 섞어 마무리한다. So-galbijjim (Braised short ribs) [Ingredients] - Sauce - Soy sauce 1 and 1/3 cups (260g) Brown sugar 2/3 cup (100g) Rice wine 2/3 cup (120g) Water 1 and 1/3 cup (240g) Minced garlic 1/4 cup (40g) Minced ginger 2/3 tbsp (10g) Green onion 2/3 cup (50g) Sesame oil 4 tbsp (30g) Pepper 1g - Short ribs ingredients - Short ribs 2kg 3 sticks of green onion (160g) 2 king oyster mushrooms (50g) 2 onions (370g) 3 spicy chili (20g) 5 shishito peppers (20g) 2 red chili (20g) 1 carrot (230g) 1/3 radish (360g) 1/2 shittake mushroom (50g) Water 1L [Recipe] 1. Place the short ribs in cold water to drain the blood over a day. 2. Cut the spring onion in half and chop into small pieces. 3. Mix soy sauce, brown sugar, rice wine, water, minced garlic, minced ginger, spring onions, sesame oil and pepper to make the sauce. 4. Trim the bottom for king oyster mushrooms and cut into 1cm-thick pieces. Trim the shiitake mushrooms or cut into 4 pieces. 5. Trim the roots of onions and cut in 4 pieces. Cut the radish into 8 pieces and trim the edges. 6. Rinse the carrot clean and cut into 1cm-thick pieces. Cut the green onions into 2-3cm length sizes. 7. Cut the spicy chili, red chili and shishito pepper into 2 or 3 pieces according to size. 8. Rinse the drained meat clean with water. 9. Put the short ribs, sauce, 1L of water into the pot. Reduce the heat to medium when it boils and heat for 1 hour. 10. Add the radishes when the meat is tender. 11. When the radishes are halfway done, add carrot, shiitake mushroom, king oyster mushrooms and simmer. 12. Add the onions when all vegetables are cooked. 13.
