今年係年廿九食團新年飯嘅大日子，當然要示範一啲應節菜式啦！今集再邀請到余健志Jacky示範「蠔皇燜雞煲」以及「開心果糖冬瓜湯圓」。團年飯一定要食湯圓咁先可以團團圓圓，而且換上開心果糖冬瓜更加係甜到入心！ 《開飯啦》HOYTV足本重溫傳送門：https://hoy.tv/title?id=22246 《開飯啦》YOUTUBE精華重溫：https://www.youtube.com/playlist?list=PLUyFQGDoSB-jn0yJrcWa7I4H20jTSyIRI 開飯啦 ｜ What to Cook Today 1月13日起逢星期一至五晚上8:30 ｜ HOY 77 —————————————————————————————————————————— 蠔皇燜雞煲 材料 鮮雞：1隻（約2斤半） 鮮蠔及金蠔：各約6隻 花菇：約6隻 瑤柱：約8粒 薑片：3-4片 乾蔥頭及蒜頭：各約3粒 蔥段：適量 雞湯：約250g 醃料 鹽及胡椒粉：各小許 調味料 蠔油：約2湯匙 魚露：約1湯匙 老抽：小許 米酒：約1湯匙 砂糖：各適量 生粉水：適量（埋芡用） 做法 1. 雞洗淨，斬件，瀝乾水分，加入適量鹽及胡椒粉撈匀，醃約20分鐘。鮮蠔先用生粉搓揉去污，可用水洗淨。金蠔洗淨、浸軟後吸乾水分再兩面煎香。花菇浸軟、洗淨、去蒂、一開二。瑤柱洗淨，用水浸軟（水留用）。乾蔥頭及蒜頭略為切開，用刀拍鬆，備用。 2. 鑊中燒熱油，先下薑片、乾蔥頭及蒜頭爆香，至全部散出香氣及微微焦黃，下雞件炒勻，下雞湯、瑤柱水、金蠔、花菇、瑤柱及調味料炒勻後，改以小火燜煮約10分鐘至雞肉熟透及湯汁開始收乾及濃稠，這時你可以先撈起浮起的雞油，然後下鮮蠔炒勻，再蓋上蓋焗約3分鐘（視乎鮮蠔的大小）最後用生粉水埋一個薄獻後便可以上碟，灑上蔥段後便可以趁熱享用了。 貼士 1. 當雞件下鑊與其他配料炒勻後便可以由大火改為小火燜煮，這樣煮出來的雞肉才會口感嫩滑不會老。 2. 在燜煮過程中，要不時將雞件炒勻翻動，以使其可均勻入味及避免黏鑊。金蠔味較濃，所以先下令雞件能吸收金蠔的鮮味，鮮蠔很快熟，所以最後才下，否則煮得太熟口感變老便不好吃了。 3. 此菜亦可按個人喜愛，加些香芹，胡蘿蔔、蓮藕等等其他可吸味的蔬菜同煮，更添風味。 —————————————————————————————————————————— 開心果糖冬瓜湯圓 材料 湯圓材料 糯米粉：適量 溫水（約40度）：適量 開心果湯圓餡材料 砂糖：100克 開心果：150克 花生：50克 糖冬瓜：80克 開心果醬：80克 牛油：約150克 海鹽：少許 八寶茶材料 紅棗：15克 圓肉：15克 葡萄乾：15克 山楂：15克 乾無花果：15克 乾百合：15克 杞子：10克 乾菊花：5克 水：1000克 冰糖：50克 做法 1. 開心果、花生先用焗爐或白鑊烘香或炒至香脆，待涼後再混合用攪拌機打碎，糖冬瓜切碎，牛油用微波爐溶化，然後將所有材料放入容器攪拌均勻，再倒入一平面器皿，蓋上保鮮紙，放入雪櫃冷藏庫冷凍約兩小時，令餡料凝固定型，備用。 2. 八寶茶材料洗淨，加入冰糖及水煮約10分鐘，成八寶茶，備用。 3. 定型後的餡料搓成適量大小的小球形狀。糯米粉用溫水搓成粉團，再分出適當大小，將餡料放入，搓成湯圓，煮至浮起後約一分鐘便可撈起，將湯圓放入適量八寶茶中，即可享用。 貼士 1. 用溫水搓出來的糯米粉團，可增加湯圓成品的軟糯口感。 2. 炒香後的開心果及花生，要放涼後才打碎，因為開心果及花生均有油分，在熱的狀態時口感會帶有韌性，不夠酥脆。 3. 牛油的份量是決定流心效果的稀稠度，當餡料撈匀後的稀稠度，效果就差不多等於湯圓煮熟後的流動度，大家可以根據自己喜歡餡料的稀稠度，而增加或減少牛油的份量。 4. 除八寶茶外，做好的湯圓除可配以最傳統的番薯糖水外、各類中式糊類、糖水等都非常合適，各具風味 —————————————————————————————————————————— #開飯啦 #黃靜藍 #賀年食品 #農歷新年 #新年 #蛇年 #新年糕點 #名廚 #煮食節目 #煮題Cook #余健志Jacky #團年飯 #湯圓 #雞煲 #HOYTV #HOY77 ------------------------------------------------- Like & Follow 👍👍👍 HOY TV Facebook ► https://www.facebook.com/hkhoy HOY TV Instagram ► https://www.instagram.com/hk.hoy/ 有線新聞 Facebook ► https://www.facebook.com/icable.news 有線新聞 Instagram ► https://www.instagram.com/icable.news 有線生活 Facebook ► https://www.facebook.com/icable.life 有線生活 Instagram ► https://www.instagram.com/icable.life 有線娛樂 Facebook ► https://www.facebook.com/icable.ent 有線健康 Facebook ► https://www.facebook.com/icable.health
