基本【タルト生地・敷き込み型】【basic tart】/パティシエが教えるお菓子作り！

オンラインスイーツスクールSaki.+中嶋咲絵です。 今回は基本のタルト生地と敷き込み方をご紹介します。 生地づくりでのポイントはゴムベラで混ぜる時に練りすぎないこと。 グルテンが出て固くなり生地が縮みやすくなります。 敷き込みは生地が軟らかくなってしまったら無理に続けず、しっかり冷やして休ませることです。 40g unsalted butter 30g icing sugar A pinch of salt 12g almond powder 12g eggs 75g cake flour [Prep] Bring butter and eggs to room temperature. Cut the paper patterns. Preheat the oven to 170°C after laying it out. How to make it. (1) Smooth the butter with a rubber spatula and mix in the powdered sugar. Gradually mix in the powdered sugar, cutting it off at first as it dances. Add salt. (2) Add the almond puddles and mix in as well. You don't need to sprinkle. (3) Add the whole eggs, brought to room temperature, in three additions. Mix thoroughly each time. If it is cold, the butter will harden. (4)Add the sifted flour and cut the mixture into pieces at a time. If the mixture is too cold, the dough will be too hard. (5) Wrap the dough in plastic wrap and place it in the refrigerator for at least 1 hour. (6) Knead the dough. Quickly knead the dough on a silpat or stand until the dough is smooth. Press the dough out with your hands and roll it out to 3mm thickness. Cool the dough in the freezer for about 5 minutes (until the dough is firm). (7)Spread the rested dough into the mold. If the dough is too cold, it will crack, so spread it out just enough to make it firm. Put the dough on the center of the mold and put the dough in the mold first. (8) Fill the bottom with the corners of your thumbs, and then spread the sides of the dough with your thumbs. (9) Spread the overhanging dough at the top to the outside and cut off the excess dough with a rolling pin. Chill in the freezer for about 5 minutes. (10)Bake at 170°C for 20 minutes. (11)Remove the pebbles and paper and bake for another 10 minutes to lightly color the bottom. If you want to fill the creme d'amande with almond cream and bake further, serve it here and do not bake any longer. If there is no baking, bake until the bottom is well browned. 【材料】　5号サイズ（直径15cm）タルト型 1台分 無塩バター　40ｇ 粉糖　30ｇ 塩　ひとつまみ アーモンドプードル　12ｇ 全卵　12ｇ 薄力粉　75ｇ 【下準備】 ・バター、卵は予め常温に戻しておく ・型紙を切っておく ・敷き込みが終わったらオーブンを170℃に予熱しておく 【作り方】 ①バターをゴムベラでなめらかな状態にし、粉糖を入れて混ぜる。粉が舞うので始めは切るように、徐々に混ぜ込んでいく。塩も加える。 ②アーモンドプードルも加えて混ぜる。ふるわなくて大丈夫です。 ③常温に戻した全卵を3回に分けて加える。都度しっかり混ぜる。冷たいとバターが固まってしまいます。 ④ふるった薄力粉を一度に加え、切るように混ぜる。粉気がなくなりまとまればOK。ここで混ぜすぎると生地が固くなります。 ⑤ラップに包み平にして冷蔵庫で1時間以上休ませる。 ⑥生地を練っていく。シルパットや台の上で生地がなめらかになるまで手早く練る。生地を手で押し広げ、3mm厚に伸ばしていく。ここで一度冷凍庫で5分程度（生地がしまるまで）冷やす。 ⑦休ませた生地を型に敷き込んでいく。生地が冷えすぎていると割れるので、しなる程度の固さで敷き込む。型の中心に乗せまずは生地を型の中におさめていく。 ⑧親指の角を使って底の角をしっかり詰め、次に側面を親指の腹で敷き込んでいく。 ⑨上部のはみ出した生地を外側に広げ、めん棒で余分な生地を切り取る。冷凍庫で5分程度冷やす。 ⑩フォークで底面に穴を開け（ピケ）、紙を敷いて重石をのせ、170℃で20分焼成する。 ⑪重石と紙を外し、更に10分焼いて底面に軽く色を付ける。クレーム・ダマンド（アーモンドクリーム）を詰めて更に焼成する場合はここで出し、これ以上焼成がない場合は底面にしっかり色がつくまで焼く。 公式HP　　http://saki-plus.com/ メルマガ　 http://saki-plus.com/maillesson/ Instagram　https://www.instagram.com/saki.plus/?hl=ja blog　　　 https://ameblo.jp/satting517/ FaceBook http://www.facebook.com/sakie.nakajima.ss ■中嶋咲絵プロフィール 製菓衛生師 菓子製造技能士1級 高校卒業後、パティスリーで11年修行。 独学で製菓衛生師を取得。 トップパティシエの登竜門、ジャパンケーキショーで4度入賞。 その他入賞経験多数。 その後、製菓学校教員へ転職。 お菓子を作る仕事から教える仕事という新たなチャレンジをする。 4年間、製菓実習はもちろん製菓理論など、座学授業も受け持つ。 「教える」仕事にやりがいを感じ、現場で培った技術と専門学校で磨いた教えるスキルを生かし 全国どこからでも受講できる、オンラインスイーツスクールの立ち上げを決意する。 2019年12月オンラインスイーツスクールSaki.+を開講。 #タルト生地 #タルトの作り方 #お菓子作り #プロのレシピ #パティシエ
