苺をたっぷり使ったマドレーヌです。フレッシュの苺のみだとどうしても変色してしまうので、今回はいちごパウダーを加えて色補強しています。国産の苺でもできますが、色も香りも少し弱いので海外産の冷凍苺をおすすめします。 今回はコキーユ型を使用していますが、シェル型を使用する場合は8個分程度になります。 ----------------------------------------------------- 「自己流のお菓子作りからワンランク上のお菓子作りへ」 ONLINE　SWEETS　SCHOOL　Saki.＋　http://saki-plus.com/ Free mail Magazine　http://saki-plus.com/maillesson/ Instagram　https://www.instagram.com/saki.plus/?... アドバイザー・レシピ開発等も行っています。 ----------------------------------------------------- 【目次】Table of Contents 00:00　オープニング（Opening） 00:12　レシピ（Recipe） 00:25　 苺ジャム（Strawberry jam） 02:07　 マドレーヌ生地（Madeleine） 【材料】コキーユ型 6個分 / Coquille moulds for 6 pieces □苺ジャム（Strawberry jam） 冷凍いちご / frozen strawberry　100g ※色の濃い海外産冷凍苺がおすすめです グラニュー糖 / sugar　30g □マドレーヌ（Madeleine） 全卵(M) / eggs(M)　55g グラニュー糖 / sugar　 苺ジャム / strawberry jam　30g 薄力粉 / cakeflour　35g アーモンドプードル / almond powder　15g ベーキングパウダー / baking powder　2g いちごパウダー / strawberry powder　7g 無塩バター / unsalted butter　50g 【下準備】 ・生地を焼く前にオーブンを180℃に予熱する ・粉類はよく混ぜ合わせてふるっておく 【作り方】 ■苺ジャム 冷凍の苺にグラニュー糖をまぶし、常温で解凍させる。 中火にかけ、苺を潰しながら沸騰させる。沸いたら焦げないように混ぜ続け、水分が飛んでとろみが付くまで加熱する。 火を止め、ボウルにあけて冷ます。30gをマドレーヌの生地に使用する。 ■マドレーヌ 無塩バターを耐熱ボウルに計り、ラップをして電子レンジにかける(600W40~50秒)。 溶けて温かい状態になったらラップをしたまま置いておく。 薄力粉、アーモンドプードル、ベーキングパウダー、いちごパウダーを合わせてふるっておく。 卵をほぐす。グラニュー糖を加え、泡立てないように混ぜる。冷めた苺ジャム30gを加え、苺の粒を潰すように混ぜる。 ふるっておいた粉類を加え、中心からゆっくりと混ぜる。最後に溶かしておいたバター（40℃程度）を加え、混ぜる。 ヘラでボウルの周りをはらい、ラップをして常温で1時間休ませる。 口金を付けていない絞り袋に生地を入れて、型に絞る。180度に予熱したオーブンで18~20分焼く。 焼けたらすぐに型から外し、網の上で冷ます。 　　＼＼＼Bon appétit!／／／ 〜How to make it in English〜 【Preparation】 Preheat the oven to 180℃. / Sift the flours until well mixed. 【How to make】 ■Strawberry jam Sprinkle the frozen strawberries with sugar and leave to thaw at room temperature. Bring to a boil over medium heat, mashing the strawberries. Once boiling, continue stirring to prevent burning and cook until the water has evaporated and the mixture has thickened. Turn off the heat, place in a bowl and leave to cool, using 30g of the mixture for the madeleine dough. ■Madeleines Measure the unsalted butter into a heatproof bowl, cover with plastic wrap and microwave (600 W for 40-50 sec). When it is melted and warm, leave it in the microwave with the plastic wrap on. Sift together the flour, almond powder, baking powder and strawberry powder. Beat the eggs. Add the sugar and mix without whisking. Add 30g of the cooled strawberry jam and mix to mash the strawberry grains. Add the sieved flour and mix slowly, starting from the centre. Finally, add the melted butter and mix. Scrape around the bowl with a spatula, cover with plastic wrap and leave to rest at room temperature for 1 hour. Pour the dough into an ungusseted pastry bag, pipe into a mould and bake in a preheated oven at 180℃ for 18-20 min.
