材料 / Ingredients 帶子 8 粒 8 scallops 西蘭花1個 1 broccoli 西蘭花起鑊料 / Fry Broccoli ingredient 薑 1小粒 切片 Slice 1 small ginger 蒜頭 2~3 粒 刴蓉 Mince 2 to 3 garlic 西蘭花 芡汁 / Broccoli Starchy juice 鹽 1/3 茶匙 Salt 1/3 tsp 糖 1/3 茶匙 Sugar 1/3 tsp 粟粉 1茶匙 Corn starch 1 tsp 水 3 ~ 5 茶匙 Water 3 ~ 5 tsp 醃帶子醃料 / Marinade for scallops 1 茶匙胡椒粉 1 tsp of white pepper 1/2 茶匙黑椒碎 1/2 tsp black pepper 1/2 茶匙鹽 1/2 tsp of salt 帶子汁材料 / Scallops sauce 蒜頭 3粒 刴蓉 Mince 3 garlic cloves 牛油 2湯匙 2 tbsp of butter 花雕酒 3湯匙 3 tbsp of wine 做法 / Steps 1. 將一棵西蘭花浸於鹽水 ( 1湯匙鹽 加 2 升水)， 浸30分鐘。 然後清洗2次。 1. Put the broccoli into salty water (1 tbsp of salt and a large bowl of water) for 30 mins. After that , rinse well. 2. 將西蘭花底下莖部切出，然後切出一朵朵連莖的西蘭花。 2. Slices off the lower part of floret stems. Then, slice floret with stem. 3. 切出大細差不多的 西蘭花球， 太大的花球要切一半。 3. Make the florets as similar in size as possible. Slice large floret in half that results in more even cooking. 4. 預先拌好西蘭花芡汁。 4. Mix broccoli starchy juice well. 5. 準備好西蘭花和材料 1粒薑切薄片， 2至3粒蒜頭刴成蓉。 5. Slice ginger into tiny pieces, mince 2 to 3 garlic. 6. 帶子要在雪櫃解凍12~ 24小時或至帶子軟身。 6. Defrost scallops in fridge for 12~ 24 hrs or until they become soft. 7. 用廚房紙抹乾帶子表面水分。 7. Dry the scallops with kitchen paper. 6. 煮前，放於室溫20分鐘。 6. Rest in room temperature for 20 mins. 7. 【煎前】才醃帶子。 7. Marinate the scallops right before pan fry. 8. 準備好 帶子配料 蒜頭3粒刴蓉，牛油2湯匙，花雕酒2湯匙。 8. Mince 3 garlic cloves, 2 tbsp of butter, chinese wine 2 tbsp. 9. 放入250毫升雞湯，250毫升水，加入2湯匙油，煲滾，放入西蘭花灼1至最多2分鐘。撈起。 9. Mix 250ml chicken soup with 250ml water. Rolling Boil, add broccoli, cook 1 to 2 min. Fry until piping hot. 16. 2湯匙油下鍋。 16. Add 2 tbsp of oil. 17. 平底鍋出煙時，放入帶子。 17. Scallops in while pan super hot. 18. 用手壓一壓帶子。 18. A little pressure over scallops. Press a bit the scallops. 19. 帶子圍邊而放。 19. Put scallops round the pan. 20. 每邊煎45秒。 (中大火) 20. Fry for 45 seconds each size. (Medium high heat ) 21. 順次序反到另一邊。 21. Flip to the other side according to the placing sequence. 22. 隨即放入牛油及蒜蓉。 22. Add butter and garlic. 23. 牛油淋上帶子面。 23. Drizzle melted butter over scallops. 24. 將2湯匙花雕加入鍋內，與剩下的蒜蓉牛油汁拌勻。 24. Add 2 tbsp chinese wine into garlic butter, fry 30 seconds. 25. 帶子放上西蘭花面及淋上汁，即成。 25. Put scallops over broccoli. Add wine garlic butter sauce. Dish up. 👌😉 若有疑難， 請隨時發問!
