【開飯啦】EP45完整版｜牛扒腰批｜炸基輔雞｜黃靜藍｜楊國基｜好好制作｜HOY 77｜星期一至星期五 8:30 PM 今集《開飯啦》邀請資深名廚Billy楊國基師傅，為大家示範非一般的新年新煮意。兩道經典西式佳餚「牛扒腰批」、「炸基輔雞」，值得一試。楊國基（BILLY）資深廚務顧問世界廚師協會認可國際比賽評判楊國基牛扒腰批材料：牛柳 500 克牛腰 150 克洋蔥 40 克白蘑菇 6隻紅蘿蔔 40 克蒜蓉 10 克迷迭香 5克香葉 3片紅酒 100毫升燒汁 300毫升麵粉 20 克酥皮 1 塊雞蛋 2 隻盬及糖少許黑胡椒碎少許做法： 1. 將牛腰表面洗淨，橫切成上下兩片，把白色的筋膜完全切除去腥味其餘配料切粒，備用 2. 將牛腰、牛柳切粒，加入麵粉及油拌勻，加入糖、鹽及胡椒碎調味，分別煎香，盛起備用 3. 炒香洋蔥、蒜蓉、紅蘿蔔及香葉，加入牛腰、牛柳炒勻，加入迷迭香、紅酒及燒汁，加糖、鹽調味 4. 倒入焗盤中，盤邊塗抹蛋黃液，把酥皮蓋上，再在酥皮上面塗抹蛋黃液預熱焗爐至200度，焗約10分鐘至金黃色，即成楊國基炸基輔雞雞胸 200 克布里芝士（Brie） 80 克意大利巴馬火腿 50克麵包糠 40 克雞蛋 1 隻麵粉 20 克鹽及糖少許黑胡椒碎少許做法： 1. 將雞胸肉起出，連雞上翼骨，去皮，攤薄備用 2. 用意大利巴馬火腿包封布里芝士，再用雞胸捲起，加鹽及黑胡椒碎調味 3. 表面抹上麵粉及蛋漿，蘸上麵包糠，炸至金黃色，雞肉熟透，即成 #開飯啦 #HOYTV77台 #好好制作 #77台 #免費電視77台 #牛扒腰批 #炸基輔雞 #howhowproductions #食譜 #大廚 #廚師 #家常菜 #住家菜 #廚房 #秘技 #零失敗 #新年 #賀年 #團年飯 #黃靜藍 #楊國基 ------------------------------------------------- Follow US: YouTube: https://www.youtube.com/c/好好制作 IG: https://www.instagram.com/howhowproductionshk/ FB: https://www.facebook.com/Howhowproductions
