#魚肉燒賣#FishShumai#香港街頭小食 去咗外國, 能夠在家吃到自己整的魚肉燒賣, 真係好開心好開心. 魚肉燒賣要有魚味, 亦要有彈牙咬口, 食落不是一團粉硬磞磞, 亦不是成口肥油. 小小一粒燒賣, 心機功夫也多. 最重要魚膠不可太多水, 否則你需要落好多粉去吸收多余水份, 影響口感, 但亦不可唔落粉, 始終燒賣不是魚蛋, 完全唔加粉是不可的. 打膠時要保持低温, 防止出水, 亦可以令魚槳更快成膠. 落完木薯粉後魚槳感覺太實太硬的話, 可以酌量逐少加入清水再攪勻, 魚槳會變得較軟身. 包好的燒賣記得放冰箱雪過夜, 令魚肉質地更好更緊緻. 蒸的時侯亦更容易. Ingredients 材料: For making approximately 40pcs 大約40粒份量 Frozen fish fillet 急凍魚柳 370g ( I used Basa fish fillet 我示範的是用巴沙魚) Fatty pork 肥豬肉 50g Egg white 蛋白 1 Corn flour 粟粉 40g Tapioca flour 木薯粉 100g Wanton wrapping 雲吞皮 1 pack Salt 塩 1 tsp garlic蒜頭 1 clove 粒 Seasoning 調味: Sugar 糖 2 tsp Chicken powder 雞粉 1tsp Fish powder 鰹魚粉或大地魚粉 1 tsp Fish sauce 魚露 1tsp White pepper 白胡椒粉 1/2 tsp Sesame Oil 麻油 1 tsp Oil 生油 1 tsp 落完木薯粉後魚槳感覺太實太硬的話, 可以酌量逐少加入清水再攪勻, 魚槳會變得較軟身.
