For the first recipe video in the new kitchen, Andy is making a risotto with salmon and peas, and I'm popping a bottle of DR Edge sparkling to celebrate. Indian Takeaway in Surry Hills: Samir's Indian Kitchen WINE: Dr Edge Brut Nature Sparling NV RECIPE Risotto with smoked salmon and peas Ingredients - 1 Tbs extra virgin olive oil - 30g butter - 1 white onion, finely diced - 3 cloves garlic, finely grated - 400g (2 cups) arborio rice - 250ml (1 cup) white wine - 1 litre (4 cups) chicken stock, hot - 1 cup frozen peas - 150g hot smoked salmon - zest of 1 lemon - 1 bunch chives, finely chopped - 50g Parmesan cheese, grated Method - Heat oil and butter in a deep frying pan on medium high. - Cook onion, stirring, for 4-5 mins, until softened. - Add garlic, cook for 2 more mins. - Add rice, cook for 1 min, stirring until toasted and rice becomes translucent. - Pour in wine, bring to a simmer and cook, until almost fully absorbed. - Ladle in hot stock, reduce heat to a simmer. - Cook, stirring constantly to massage the starch out, until liquid has almost absorbed, before adding the next ladle. - Continue cooking until all stock has been added and rice is tender and creamy. - Stir in peas, parmesan, lemon zest and chives. Season to taste. - Divide between serving bowls. - Flake the salmon over the top. Garnish with some extra lemon zest and a drizzle of olive oil. Serve immediately.
