I’ve been curious about a lighter take on this classic dessert, and I finally decided to give it a go. Vic and I taste it together at the end, and I won’t spoil what we think—but let’s just say it’s worth sticking around for. If you love lemon desserts or are curious about a lighter version that still feels indulgent, you’re going to want to watch. Clean Simple Eats Lemon Pound Cake Recipe Ingredients 1 cup fat-free milk 2 Tbs. lemon juice 2 Tbs. lemon zest 1/2 cup grass-fed butter 1 1/2 cups Swerve Confectioners Sweetener 1/4 cup raw honey 3 large eggs 1/2 cup unsweetened applesauce 3 cups white whole wheat flour 1/2 tsp. baking soda 1/2 tsp. sea salt Syrup: 1/4 cup water 1/4 cup Swerve sweetener 2 Tbs. lemon juice Glaze: 1 tsp. lemon zest 1 Tbs. lemon juice 1 cup powdered sugar 2 Tbs. pasteurized egg whites 1 tsp. Creamy almond butter Directions Preheat oven to 325 degrees. Place the milk, lemon juice and lemon zest in a small bowl; set aside. Beat the butter, Swerve and honey together in a large bowl. Add in the eggs and applesauce; set aside. In a separate bowl, combine the flour, baking soda and sea salt together. Add 1/2 of the dry mixture to the wet mixture, then add the milk and lemon juice mixture and then add the rest of the dry mixture on top. Mix until just combined. Pour the batter into a greased Bundt pan. Bake for 60 minutes. Let cool for 10 minutes in the pan and then transfer to a cooling rack. Place a sheet of parchment paper under the cooling rack. Combine the syrup ingredients and then slowly pour over the cake while it's still warm. Let cool completely. Beat the powdered sugar, egg whites, lemon juice, lemon zest and nut butter together in a large bowl until well combined. Drizzle icing evenly over the cooled cake. Let the icing harden before serving. Slice into 16 servings. Enjoy! My Dad’s German Pound Cake Recipe Ingredients 2 Eggs 1/2 pound butter (2 sticks) 3 cups flour 1 cup Sugar 1 cup milk 1 lemon 1/2 cup raisins 1/4 cup slivered almonds 1/4 cup citron or lemon rind (peel) dash of salt (1/2 teaspoon) 1 teaspoon baking powder Cooking Instructions Cooking: Bake 1 hr. @ 375 degrees Butter & flour cake pan. Melt butter on low flame. Add sugar (flame off). Once cooled, add lemon juice + grated peel, almonds, citron or (peel), raisins. Add egg & stir (presumably one at a time, or stir well). Add salt, baking soda, flour mixture (already stirred). Start w/ 1/2 of it; add lukewarm milk, finish flour. *These statements have not been evaluated by the Food and Drug Administration.
