Cinnamon Rolls with Quince & Sourdough 🍎 | Soft Autumn Rolls

Soft, golden, and fragrant rolls filled with caramelized quince and topped with a silky cream cheese frosting. A cozy autumn dessert that smells like cinnamon and childhood memories 🧡 And this is what happens when you have kind and generous neighbors — they shared with me some beautiful, golden quinces 🍎💛 I just had to show them off here too! 🫓 Sourdough Starter (Basic Feed): • 50 g active starter • 50 ml warm milk • 70 g flour → Mix and leave at room temperature for at least 4 hours, until bubbly and airy. 🍞 Sweet Dough: • 100 g active starter • 150 ml milk • 150 ml water • 1 egg + 1 yolk • 150 g sugar • 10 g salt • 650–700 g manitoba flour (add gradually) • 100 g soft butter (add last) • Vanilla to taste 1️⃣ Mix all ingredients except butter, knead until elastic. 2️⃣ Add soft butter little by little until smooth and glossy. 3️⃣ Let rise 3 hrs at room temp, then refrigerate overnight. 🍎 Quince Filling: • 2 large quinces, peeled & diced • 50 g butter • 100 g sugar (brown or white) • 1 tsp cinnamon • 1 tbsp cornstarch → Melt butter, add quinces & sugar. Cook 5–7 min. → Add cinnamon & cornstarch, stir until thick. → Let cool completely. 🌀 Shaping: 1️⃣ Roll out the cold dough into a rectangle. 2️⃣ Spread the quince filling evenly. 3️⃣ Roll tightly & cut 3–4 cm slices. 4️⃣ Place on tray and let rise 2–3 hrs until doubled. 🔥 Bake at 170°C (340°F) for 30–40 min, until golden. 🍶 Cream Cheese Frosting: • 300 g cream cheese or mascarpone • 50 g powdered sugar • 2 tbsp milk • Vanilla → Beat until smooth & fluffy.
