Happy baking! 🧑🏻‍🍳 🍰 Ingredients: 6 Egg Whites Vanilla extract 1 teaspoon Sugar 60g (¼ cup, 1 tablespoon) Plain Flour 70g (½ cup) Icing sugar 90g (¾ cup) Salt ¼ teaspoon Homemade Vanilla Custard filling: Milk 240ml (1 cup) 2 Egg yolks Sugar 50g (¼ cup) Corn Starch/ corn flour 30g Vanilla extract 1 teaspoon Butter 15g (1 tablespoon) Heavy cream 120ml (½ cup) Chocolate topping: Dark Chocolate 100g Heavy cream 60ml (¼ cup) Measuring cup size - 240ml Baking pan - 25x35 cm Method: Make the custard filling: In a saucepan, mix the yolks, sugar, vanilla and the corn starch. Then add the milk and mix well. Now over medium heat, stir continuously. When the mixture gradually thickens, Switch off the heat, And stir for another 30 seconds. Add to a clean bowl, then mix in the butter well. cover with clingfilm, and let it cool down. Once it has cooled down, Whisk the custard for about 30 seconds. Add the cream and whisk again for about 1-2 minutes. Cover and chill until you use it. Make the cake: In a large, dry bowl, whisk the Egg whites, sugar and the vanilla, Until stiff peaks form. (I whisked for about 2-3 minutes) Now sift in the flour with the Icing sugar. Fold gently until everything combines. Add to the lined baking tray. Spread evenly. Bake in a preheated oven at 175c (350f) for about 15-20 minutes. Let it cool down completely. Cut the cake into 2 pieces. Add half of the Custard filling in the middle. Spread evenly. Spread the other half over the top. Make the Chocolate topping: Microwave the dark chocolate and the cream together, For about 1 minute. Mix well and let it cool down. Pour over the cake.
