Let it rest for 30 minutes. Add salt and yeast and knead for 12-15 minutes until smooth and elastic. Cover and let it rise for 3-4 hours. It's best to visit your dough once or twice during the rising and give it a traditional sourdough stretch and fold to develop the gluten and structure of the dough. Shape the dough into a round on the counter for a bench rest. Then shape into loaves and place in a parchment-lined loaf pan or greased loaf pan. Cover with a towel and let rise for another hour. Bake at 375 for 40-45 minutes.
