Add cold water: Pulse briefly until the dough just comes together—avoid overprocessing. Shape and chill: Form into a ball, wrap, and refrigerate overnight. Method Prep the veggies: Blanch or microwave potatoes, pearl onions, and frozen mixed vegetables until partially cooked. Heat the velouté: Simmer gently and stir in heavy cream to enrich. Season the chicken: Cube the chicken thighs and season with salt and pepper. Combine filling: Mix the chicken, vegetables, and velouté together until evenly coated. Fill the dish: Ladle mixture into your baking pot or pie dish. Add pastry: Lay puff pastry over the top, trimming as needed. Apply egg wash: Brush lightly for a golden finish.
