Cut the potatoes into 1.5cm / 1/4 inch thick batons, fires. Part-boil in a pan of salted water for about 6–8 minutes until just tender when pierced with a skewer. Drain well, place on an oven tray, and place in the fridge to evaporate the moisture. Generously drizzle with olive oil Bake in the oven for 12–15 minutes until the fries are golden brown and crisp, turning them a few times.
