深水埗可說是掃街美食集中地，有人選擇車仔麵、有人會去食豬膶麵，亦有人會去大南街打卡嘆café……這些食物早就跟深水埗掛上等號。有否想過，在深水埗食西餐，質素不會輸給銅鑼灣、中環高級餐廳？是不是有種反差感？你又會否願意一試？ 在福榮街157號的C2 Lab，門口放着一個巨型IronMan，單看門面很難猜到這是一間法意fusion西餐廳，很多初次到來的客人一試之後，從此成為熟客。 C2 Lab的招牌菜是油封鴨髀，由大廚威哥人手製作，不用來貨，而是由零開始鴨髀解體，到最後煎至香脆出餐，全程需要九小時。 過程不複雜，只是工序多，每一個步驟不能馬虎，只因威哥想讓客人食到，正宗法國南部油封鴨髀的味道。 炮製油封鴨髀，必須用上五斤重的鴨，鴨髀更大隻，且脂肪多，更能迫出鴨油香味。鴨子每天早上新鮮送到鋪頭，全隻鴨由威哥負責解體起肉，先切掉屁股，從中間開始把鴨剖開兩邊，盡量貼着鴨骨起出鴨肉，鴨胸留作午餐供應，鴨殼則用來熬湯，鴨髀就不用說了，基本上全隻鴨所有部位都會用得上，絕不浪費。 鴨髀改好後，用粗鹽和黑胡椒醃半小時，洗淨，印乾，再用攝氏120度的鴨油，慢煮油浸六小時，之後把鴨髀抽真空，確保鴨髀最新鮮的狀態。 客人下單，威哥把鴨髀煎至香脆，時間不用太長，四五分鐘就可以，不過火候控制很重要，否則鴨皮不是煎燶就是不夠鬆脆。 這道油封鴨髀上枱，外皮焦脆鬆化，從中間輕輕切開，隨即骨肉分離。鴨髀外皮香脆得連不吃皮的客人也愛上，一絲絲的鴨肉奇嫩無比，再蘸上威哥特製的杏脯乳酪醬，酸甜解膩，吃過一次油封鴨髀，絕對叫人念念不忘，變成鴨髀迷。 不單止油封鴨髀出色，卡邦尼意粉亦有驚喜，威哥本身從事意大利菜大廚近二十年，意粉很拿手，卡邦尼選用自家手做扁意粉，煙肉用腩肉Pancetta，港人或許會吃不慣，嫌它味太鹹太重，不過這才是正宗的味道。手工意粉彈牙嗦汁，難怪是很多客人的心水。 在C2 Lab享受過一次用餐體驗，你會發現這兒和別的西餐廳不太一樣，少了一種拘束和緊張，多得餐廳經理Billy親切的待客之道，讓來到的客人自在用餐。有時候看不懂餐牌上的意大利/法文，Billy會親自為客人介紹。 這裏沒有分廚房和樓面，忙起上來，威哥也會親自送餐及招呼客人。在C2 Lab感受到的，更多是小店的人情味。拍攝當晚看見Billy在熟客面前跳舞，及後和Billy說起，他提道：「其實小店就是可以和客人這樣做，難道我之前在酒店工作也可以和客人這樣做嗎？那時候在酒店是professional service，現在C2 Lab做的是warm service，想讓客人感受到朋友般的相處。」 或許大家聽到在深水埗吃西餐，露出奇怪的表情。甚麼？居然去深水埗吃西餐？但請相信我，C2 Lab絕對是一間有驚喜、性價比極高的西餐廳，值得為油封鴨髀去一趟。 油封鴨髀配杏脯乳酪汁 $228 義式卡邦尼手工扁意粉 $138 慢煮法國鴨胸配鵝肝燒汁 $98 （lunch set ) C2 Lab 地址：深水埗福榮街157號地 電話：3568 2648 營業時間：星期一至日 12pm-4pm；6pm-10:30pm IG：@c2lab.hk FB：C2 Lab Bar & Restaurant 撰文：Yvonne Lam 攝影：Fong Ka Him、Doris Wong 剪接：Fong Ka Him 美術：Anita Lam TalkFood 先填飽肚子再前進 YouTube : https://www.youtube.com/user/TALKFOOD Facebook : https://www.facebook.com/talkfood Instagram : https://instagram.com/talkfood?igshid=MTA0ZTI1NzA= #油封鴨髀 #鵝肝 #慢煮鴨胸 #卡邦尼意粉 #慢煮法國鴨胸配鵝肝燒汁 #義式卡邦尼手工扁意粉 #油封鴨髀配杏脯乳酪汁 #手工扁意粉 #手工意粉 #深水埗 #fusion #深水埗美食 #食晏 #外賣 #西餐 #晚餐 #掃街 #c2lab #TalkFood #TalkFood深水埗 延伸閱讀： 【#街坊嘢】深水埗搵到 6算円價 $65福岡元祖豚骨拉麵 | 一喜食堂 https://www.instagram.com/p/CrTJDd9BTHI/
