Prep Peppers & Bacon Char the poblano and bell peppers on an open flame or grill. Leave the char on for that smoky rustic flavor. Cook the bacon, chop it, and save the bacon grease. 2. Mix the Beans In a large bowl or disposable pan, combine the baked beans, peppers, and onion. Add brown sugar, white sugar, honey, BBQ sauce, Dijon mustard, sea salt, black pepper, and garlic. Mix well. 3. Add Bourbon & Bacon Grease Stir in the bourbon and bacon grease. Save the chopped bacon for later (don’t add it yet). 4. Smoke (or Oven-Bake) Place the pan of beans on your smoker (or oven at 275°F) for 1 to 1½ hours. Don’t overcook—beans should stay intact and not mushy. 5. Finish with Bacon Stir in the cooked bacon right before serving for that bold bacon punch. Chef Dro Tips No Smoker? Add a few drops of liquid smoke and bake in the oven.
