Add onions and sauté until translucent. Add carrot and celery, stir well. Then add garlic and cook for 5–7 minutes. Add potatoes and turmeric, stir, and sauté for 2 minutes. Pour in hot water or vegetable broth, bring to a boil. Add cauliflower, cover, and simmer for 7–8 minutes. Add broccoli and a bit more hot water if needed. Cover and cook for another 7 minutes on medium heat. Add Parmesan, cover, and cook for 5 minutes until melted. Season with salt, black pepper, and Italian herbs.
