煮題COOK EP34|家常豬扒呢招你要識|Ricky👨🏻🍳經典焗豬扒飯|Jacky👨🏻🍳滑三蔥啤酒燜豬扒配菜飯|大廚教煮家常菜|星期一至五晚8:30|好好制作|HOY TV 今集繼續看看雪藏食材如何處理,兩位大廚跟大家分享「家常豬扒呢招你要識!」Ricky為大家帶來茶記名物「經典焗豬扒飯」,還會還原昔日香港高級茶餐廳的做法,看看Jacky能否吃出「想當年」的味道!至於Jacky則還以一道「三蔥啤酒燜豬扒配菜飯」,在經典的上海家常菜中加入新意! 👨🏻🍳Ricky-經典焗豬扒飯 材料A: 急凍豬扒 2塊 清水 500克 鹽 50克 糖 20克 老抽 10克 梳打粉 1克(可省略) 材料B: 白飯 400克 蛋 2隻 材料C: 洋蔥 200克(切片) 車厘茄 150克 番茄醬 400克 菠蘿粒 100克 雞湯 100克 芝士 200克 做法A: 1. 將急凍豬扒隔袋解凍 2. 將清水、鹽、糖和老抽拌勻,放入豬扒浸醃1小時,然後撈出抹乾水份備用(加梳打粉令肉更鬆軟) 3. 平底鑊燒熱,抹少許油,放入豬扒,大火煎香一面,關火,把豬排翻面,用餘溫把豬扒煮熟 做法B(炒飯): 1. 用雞蛋將飯炒好,加豉油及鹽調味, 備用 做法C(番茄醬): 1. 鑊內下少許油,放入洋蔥先炒2分鐘 2. 加入番茄醬、車厘茄、菠蘿粒和雞湯,大火煮滾後,轉小火煮1分鐘 做法D(焗飯): 1. 將芝士放在炒飯上,之後淋上番茄醬 2. 將炒飯放焗爐,用上層面火焗約3分鐘至表面金黃色 3. 把豬扒切件,鋪放在焗飯上即成 👨🏻🍳Jacky-三蔥啤酒燜豬扒配菜飯 材料: 雪藏無骨豬扒 600克 薑片A 30克 蔥段A 30克 水 70克 薑片B 數片 蔥B 150克(整顆) 洋蔥 半個(切粗絲) 京蔥 1棵(切段,開半) 啤酒 500毫升 雞蛋 4-5隻 醃料 : 鹽 5克 糖 5克 胡椒粉 2克 薑蔥水 70克 花雕酒 10克 雞蛋 1隻 生粉 70克 調味料: 花雕酒 15克 冰糖碎 35克 老抽 15克 生抽 25克 海鮮醬 35克 鎮江醋 15克 做法: 1. 豬扒洗淨,然後用刀背把豬扒剁鬆,然後在豬扒邊上切2-3刀,將豬板筋切斷,備用 2. 薑片A、蔥段A和水放到盆里,用手搓出汁液,用網篩隔去薑蔥,成薑蔥水 3. 豬扒和醃料充分拌勻,醃製約兩小時以上 4. 鍋中加入油,把豬扒放入,煎香兩面(不用全熟)撈起,雞蛋煎香兩面至熟,盛起備用 5. 然後加入薑片B煎香,放入蔥B、洋蔥及京蔥炒香,再加入豬扒及煎雞蛋,灒入花雕酒,倒入啤酒和加入調味料(除鎮江醋),蓋上鍋蓋,大火煮開轉中火,燜煮20分鐘左右 6. 大概20分鐘後,打開蓋子,開大火煮至汁水濃稠,最後加入鎮江醋煮開即可 菜飯材料: 白米 300克 水 300克 小棠菜 200克 調味料: 熟油 少許 鹽 少許 做法: 1. 米洗淨後,放入電飯煲,加入水,按煮飯鍵開始煮飯 2. 用中火燒熱鍋,下少許油,加入小棠菜炒勻,至軟身後即可,待飯煮熟後,將小棠菜倒入飯內,再加入油及少許鹽撈匀即成菜飯 📺 煮題COOK|星期一至五晚8:30|HOY TV ------------------------------------------------- Follow US: YouTube: https://www.youtube.com/c/好好制作 IG: https://www.instagram.com/howhowproductionshk/ FB: https://www.facebook.com/Howhowproductions
