EP 49 用參製作 海參一直是中國人視為上品的食材, 其珍貴食療及獨特口感深受愛戴, 至於煮法一向並不多, 兩位大廚又可以想出什麼新煮意呢? ! Jacky 最愛發掘新煮意, 今次又怎會被難到呢! 酸辣湯酸酸辣辣, 味道非常討好, Jacky的版本更多了一份不一樣的調味料, 令酸味更柔和舒服, 再加上有營海參, 一碗又點會夠!! 海參從沒出現在西餐餐桌上, Ricky 師傅會想出什麼新煮意?! 他找來西班牙火腿, 加入瑤柱及雞湯把海參燴至入味, 再釀入鮮味帶子, 以蒸蛋墊底, 單是個LOOK都贏了。 JACKY 食譜: 海參番茄酸辣湯 材料 : 海參 4-6支(視乎大小) 番茄 600g(約3個) 茄膏 20g 瑤柱 30g(乾計) 基圍蝦 約16只(視乎大小) 金針菇 150g 雞蛋 3隻 水 約1.5L 乾蔥頭 2粒(切絲)約20g 薑絲 約20g 生粉水 適量 芫荽碎或蔥花 適量 調味： 鎮江醋 80g 喼汁 30g 生抽 20g 鹽 5g 糖 15g 胡椒粉 約6-8g 辣椒油 適量 麻油 適量 做法 : 海參浸泡方法 1.海參沖洗表面，放入盛器，加入清水，蓋上保鮮紙，放入雪櫃浸發約3-4天至海參軟身(視乎海參的大小及厚薄)，然後剪開海參底部的肚，再浸發兩至三天左右，至海參脹身，再將海參肚内的內臟洗淨。繼續浸發兩至三天 ，其間每日均需要換水，如海參未夠脹身，則仍需再浸發更長時間。 酸辣湯做法 1.番茄底部用刀𠝹十字，放入滾水煮約10-15秒秒鐘，撈起放入冰水浸泡約數分鐘，去皮切丁，備用。 2.瑤柱洗淨用水浸軟，基圍蝦去頭、剝殼、挑腸，用少許鹽撈匀略醃，備用。 3.金針菇切去根部，切成兩段，用手撕開，雞蛋打散，備用。 4.鍋中下油燒熱，加入乾蔥頭及薑絲炒香，然後加入番茄及茄膏炒匀，及將番茄略為壓爛，倒入水，加入海參、瑤柱、基圍蝦、金針菇及調味料(除辣椒油及麻油)煮開，用生粉水埋獻，最後再埋一個蛋花獻，盛起，淋上適量辣椒油及麻油，最後灑上蔥花即可趁熱享用。 貼士: 1.此道酸辣湯的配料，亦可因應各人口味的喜好而改動，如加入筍絲、木耳絲、冬菇絲、豬肚絲、鮮魷魚絲、帶子粒等均可。而在酸的味道上，除了鎮江醋之外，我特意加入了番茄及喼汁的酸味，令整道酸辣湯的酸味更有層次感。 2.在最後埋蛋花獻的時候，將蛋液沿鍋邊倒入後，應讓蛋液在鍋中停留十數秒後，待蛋液開始凝固成蛋花之後才攪拌，否則蛋液便很快碎散，做不出完美蛋花的滑溜效果了。 RICKY 帶子釀海參 燴海參材料 : 雞湯 500克 西班牙火腿 30克 江瑤柱 50克 海參 (已浸發) 10條 釀海參材料 : 帶子 100克 蝦子 5克 (烘香) 小香蔥 10克 粟粉 10克 蒸蛋材料 : 雞蛋 100克 雞湯 150克 做法: 1. 將所有材料放進小鍋內,大火煮滾後, 轉中小火燴30-60分鐘(視個人喜好質地而定) 2.之後取出海參,留汁待用。 釀海參做法: 1.帶子切粒,之後用匙羹壓成茸, 加入其餘材料拌勻 2.將材料釀入已燴好的海參內, 大火蒸5分鐘。 蒸蛋做法: 1.將材料拌勻, 倒入碟內, 蒸約2-3分鐘至僅熟 上碟 : 1.將海參放蒸蛋上 2.用粟粉將燴好海參湯汁做成薄芡, 淋在海參上, 加入小香蔥碎, 完成 #煮題COOK2｜星期一至五 8:30 PM｜HOYTV 77台 🎥【煮題COOK2 】更多影片 https://youtube.com/playlist?list=PLkqOzsNoWwYW5dMiIX3ifTBKI1HYII497 Follow US: YouTube: https://www.youtube.com/c/好好制作 IG: https://www.instagram.com/howhowproductionshk/ FB: https://www.facebook.com/Howhowproductions 【煮題COOK】Facebook : https://www.facebook.com/ricky.jacky.cook 【煮題COOK】IG： https://www.instagram.com/ricky_jacky_cook/ #煮題COOK2 #HOYTV77台 #好好制作 #Ricky #Jacky #77台 #HOYTV #余健志 #張錦祥 #食譜 #食譜分享 #chef #大廚 #廚師 #RickyCheung #JackyYu #煮題COOK
