"我们的视频着重展示美食制作过程，所有食材的来源都符合合法和道德标准。" 嗨！大家好！我是傻大姐！也是一個愛好煮食，烘培者！ 自制蓮蓉餡, 味道純正，淡淡的蓮蓉清香，沒有添加劑，吃著放心,但是一定要有點耐心, 因為制作比較耗時..要是想做出成功的月餅大家不要隨意減糖減油。否則會影響月餅的可口度及耐放度，而足夠的糖能增加蓮蓉餡的光澤和黏度，相反不足的糖量會導致餡料松散。看似糖和油都非常高，但是烤好的月餅甜度都剛剛好！ 自制蓮蓉餡 材料: 200克 去皮蓮子 150克 白糖 40克 麥芽糖 100毫升 玉米油/食油 做法: 1.蓮子清洗幹凈,提前清水浸泡4小時以上,時間越長越容易煮爛,逐個掰開蓮子,去掉蓮子芯(蓮子芯帶苦的,一定要清理幹凈)！ 2.蓮子放入鍋裏加入650毫升清水,大火燒開後轉小火,蓋上鍋蓋,但是不要關緊,留一點縫陷,燜煮35分鐘，至蓮子全部變軟 3.將蓮子以及煮蓮子的水放料理機裏分次打成蓮蓉泥。水不要加的太多，（加太多，炒蓮蓉需要炒很久才能將蓮蓉裏的水分炒幹） 4.鍋裏倒入20毫升的油, 和一大匙的糖,小火拌煮至溶解及淺褐色，加入蓮蓉泥拌勻,再將剩余的糖倒入煮至稍幹。 5. 中小火炒蓮蓉，中間分3次加入油，每次都要炒到油全部被吸收蓮蓉吸收後再加下一次。炒到稍微抱團後放麥芽糖，繼續翻炒成團，然後再炒一炒就可以了。 6. 抱成團後,離火，放置冷卻, 即可用來做月餅內餡了,如果沒立刻使用,就用保鮮膜包住,裝進保鮮袋,收入冰箱，可以大約保存2周。 --------------------------------------------------------------------------- Hi!
