Ingredients: 550 g / 19.4 oz / 4 3/4 cups bread flour (12% protein) 7 g / 2 1/4 tsp dry yeast 410 ml / 13.9 oz / 1 3/4 cups water 8 g / 1 1/3 tsp salt Approximately 1 tbsp olive oil, for the top of the dough Method (brief summary): Mix the dry yeast into the flour and stir until the yeast is completely absorbed. Add the water and salt and mix until a soft dough forms. If any dry flour remains, simply spray it with a little water instead of overmixing. Add about 1 tablespoon of olive oil on top of the dough and gently spread it out. Cover and let it rest at room temperature for 30 minutes. Wet your hands with water or olive oil and fold the dough from the outside in. If your flour is low in protein, make two sets of folds, 30 minutes apart, to strengthen the gluten. Cover the dough again and let it rest until doubled in size. Gently turn the dough out onto a floured surface, shape it, and place it on a baking sheet. Score the dough with a sharp knife or razor blade. Bake in a preheated oven at 210°C (410°F) for about 30 minutes. Place a bowl of boiling water on the bottom of the oven to create steam.
