Ingredients ~ 7 Large Eggs 1 Cup Roasted Corn (set some aside for garnish) 1/4 Cup Diced Red Onion 2 Tbsp Diced jalapeno 1/3 Cup Mayo 2 Tbsp Sour cream Juice of Half a Lime 1/2 Tsp Tajin 1 1/2 Tbsp Cotija Cheese 1 Tbsp Chopped Cilantro Instructions ~ 1. Add olive oil in a skillet over medium heat 2. Add 1 cup of drained corn to the pan and cook for 8-10 minutes, stirring occasionally until charred. 3. Next, boil eggs for 10 minutes or cook eggs with the Dash Rapid Egg Cooker. 4. Transfer eggs to an ice water bath to cool for 2-5 minutes. 5. Peel eggs and cut them in half lengthwise. Remove the yolks and set aside. 6. Pour some Tajin onto a small plate then dip the cut side of the egg white halves into the Tajin. Then set the egg whites to the side. 7. In a mixing bowl, mash the egg yolks with a fork until smooth. 8. Add the roasted corn, red onions, jalapeño, mayonnaise, sour cream, lime juice, Tajin, cotija cheese, and cilantro to the mashed yolks. Mix until well combined. 9. Spoon or pipe the elote deviled egg filling into the hollowed-out egg white halves. 10.
