#煮題COOK｜25/7起 逢星期一至五晚 8:30｜香港開電視77台 更多節目【煮題COOK 】影片 YouTube ：https://youtube.com/playlist?list=PLkqOzsNoWwYV3NlOBHyJ5RMxTjgIRuWWw 第八集（自製萬用醬） 醬汁，是不少菜式之靈魂！ 中西餐都有五花八門的醬汁，有些菜式，醬汁更超越主要食材地位，叫人忍不住吃到一滴不漏。 試想想，如果家中常備一瓶美味萬用醬，做菜時加些、吃飯吃麵時添些，真太好吧！ 今集兩位煮人就公開他們最愛的私房萬用醬，每個步驟及秘訣都一一展示，連保存大法都詳細講解。 Jacky的紫蘇刴椒醬，無論配搭魚類、海鮮及肉都是無敵滋味！ Ricky 的意大利青醬Pesto，在傳統上稍稍變化，完美比例為頭盤、主菜或伴菜都升華至另一境界！ RICKY 意大利青醬 材料: 意大利羅勒 80克 欖仁(可用松子仁) 適量 初榨橄欖油 300克 蒜 4-6瓣 巴馬臣芝士(刨碎) 適量 鹽 做法: 1.欖仁先烘香, 蒜切粒, 備用 2.將欖油及蒜放攪拌機攪拌十幾秒 3.加入羅勒及欖仁再攪拌十幾秒 4. 加入芝士碎攪拌數秒至混合成醬即可 **此醬可配生牛肉做成意大利CARPACCIO , 或煎羊柳配普羅旺斯燉菜同吃 JACKY 私房紫蘇刴椒醬配陳村粉蒸排骨 A. 紫蘇刴椒醬--材料 中型紅辣椒：1kg 紫蘇葉：120g 老薑：50g(洗淨,切片) 蒜頭：80g(洗淨,切片) 豆豉：50g(洗淨,瀝乾水份略為切碎) 油：300ml 醃料 白醋：100ml 粗鹽：40g 雞粉：5g(約1/2湯匙) 調味料 砂糖：25g(約1 1/2湯匙) 雞粉：10g(約1湯匙) 辣椒油：90g 麻油：60g 魚露：100ml 調味料B 生蒜片：適量 啤酒：約30g 做法 1:辣椒洗淨，瀝乾水份，去蒂，開邊，去籽，剁碎或用攪拌機攪碎，紫蘇葉洗淨，瀝乾水分，切碎，備用。 2:辣椒碎用醃料的白醋、粗鹽、雞粉撈勻醃一天出後，將排出的水份揸乾，(水不要)備用。 3:鑊下油燒熱，先下薑片以小火爆香至開始變黃，再下蒜片爆香至開始變黃，再下豆豉，繼續以小火炒至出味，下辣椒，改大火炒煮至辣椒變軟及辣椒皮開始捲起，下砂糖、雞粉、辣椒油、麻油及魚露炒勻，最後下紫蘇葉碎炒匀後便可熄火，倒出待凉卻後，便成美味萬用私房紫蘇剁椒醬。 貼士 1:做好的紫蘇剁椒醬最好用來烹調蒸類的菜色，尤其是海鮮，相當惹味，如蒸大魚頭、魚類、貝殼類都非常適合。 2:使用時，每150g之剁椒醬加入啤酒約30g及適量生蒜片撈勻鋪在所烹調的材料上同蒸，因為加入啤酒可令烹煮的食材有提鮮及令肉質有更嫩滑的作用，尤其是牛肉。 3:若不喜歡太辣的話,可適當減少辣椒油的份量。 B.紫蘇剁椒醬陳村粉蒸排骨-材料 新鮮腩排：1斤 陳村粉：數條 紫蘇剁椒醬：適量 蔥花：適量 調味料 生粉：1茶匙 鹽：1/3茶匙 砂糖：3/4茶匙 雞粉：1/2茶匙 蒜油2：約2茶匙 做法 1：腩排洗淨吸乾水分，將調味料與腩排撈勻，醃約1小時。 2:蒸籠底鋪上荷葉，將陳材粉弄散放上荷葉上，放上醃好的排骨，再在排骨上淋上適量紫蘇剁椒醬。 3：蒸鑊水滾後放入蒸籠，以大火蒸約15分鐘，取出灑上蔥花即可享用。 用具 點心蒸籠：1個 荷葉：1/2張(先用熱水浸軟、洗淨及抹乾) 貼士 1：蒜油是將蒜頭與油同炸所提煉出來的油，充滿蒜香風味，與排骨同蒸，不但增添香氣，更可令蒸出來的排骨更加香滑。 2：腩排是靠近猪腩軟骨的部位，帶點肥肉，肉質較腍，蒸出來的口感香滑鬆軟。 Follow US: YouTube: https://www.youtube.com/c/好好制作 IG: https://www.instagram.com/howhowproductionshk/ FB: https://www.facebook.com/Howhowproductions #香港開電視 #Ricky #Jacky #77台 #HKOpenTV #開電視 #好好制作 #余健志 #張錦祥 #食譜 #食譜分享 #chef #大廚 #廚師 #RickyCheung #JackyYu #煮題COOK #自製 #醬 #醬汁 #私房醬 #青醬 #紫蘇 #剁椒醬 #陳村粉 #蒸排骨 #生牛肉 #CARPACCIO #羊柳 #普羅旺斯燉菜
