The title of this video is a mouth full, but so is this awesome chocolate cookie! What chocolate lover wouldn’t love a chocolate truffle wrapped in a chocolate cookie studded with chocolate chips? This is a chocolate cookie recipe for new heights in chocolate indulgence! The little pockets of melted chocolate glisten from the oven while the warm truffle center oozes just a bit. I like to enjoy these cookies still slightly warm so I can enjoy that oozy center, but even after a few days at room temperature they offer an enduring chewy chocolaty-ness and lingering butteriness from the high cocoa butter–content chocolate. Chef Zach https://www.DallasChocolateClasses.com | Register for an online class today with Chef Zach  ---- Yield: Twelve 3-inch round cookies (you can use the two end pieces to make two more) Dough: 9 Tbsp (130 g) unsalted butter ¼ tsp Instant coffee granules ½ tsp (3 ml) pure vanilla extract ¾ cup + 1 Tbsp (155 g) turbinado sugar 1 large (50 g) egg 1 2/3 cups (205 g) all-purpose flour 3 Tbsp + 2 tsp (18 g) Dutch-process unsweetened cocoa (the dark European ones such as Droste or Valrhona offer greater chocolate color and deep flavor), sifted ½ tsp (3 g) baking soda 1/8 tsp sea salt 1 cup + 1 Tbsp (150 g) chocolate chips or finely chopped chocolate Chocolate Truffle Center: 1/3 cup (78 g) heavy cream 2/3 cup (88 g) premium dark chocolate or use micro chips (see Tips & Extras) 1 Tbsp (14 g) unsalted butter Special equipment: Stainless-steel cake (or flan) rings: Ateco brand (#4901), 3” in diameter by 1¾” tall. In the video, I used the same chocolate I used for the ganache centers, for convenience. - If you select a chocolate for the ganache centers which differs greatly from the one I used in the video, the change may impact your centers by making them more or less firm than they need to be. Just keep this in mind. I formulated this recipe’s chocolate truffles using Valrhona’s 66% cacao Caraïbe chocolate for the right consistency of the truffle center. - The cocoa powder you choose will make slight differences in the cookie. - The dough and truffles freeze very well for long-term storage, wrapped airtight. - Why the stainless steel rings? The cookies need to be thick enough to contain the chocolate truffle center, so the rings prevent the cookies from spreading too much, plus the rings ensure a uniform size among all the cookies (you can develop your other cookie recipes in rings, too, for a uniform size). - If you prefer the cookie warm and the center more fluid, reheat each cookie for about 8 to 10 seconds in the microwave, or just until the top is just warm to the touch and soft again (do not overheat them). - Store then in an airtight container and they'll stay moist and chewy for days.
