I start the morning by packing our things and heading to the lake for a fresh and quiet walk with Hilma and my husband. The combination of the forest, the calm water, the soft light, and coffee time in the laavu sets a cozy tone for the day. After returning home, I prepared a comforting lunch: Hasselback Butternut Squash with a creamy garlic yogurt dip, served alongside toast with homemade pesto and cheese, simple, warm, and perfect for chilly days. In the afternoon, I did a little kitchen work and baked a Moist Apple Chocolate Cake. This seasonal treat fills the entire house with the delightful aroma of apples and cocoa, perfect for a quiet moment with coffee, and then our day gently comes to an end. 🧡🍂 Thank you so much for being here🌸💛 Sending a lot of hugs....💛 All recipes can be found in the pinned comment of this video📌 🍎 Moist Apple Chocolate Cake 🍫 Ingredients Dry:📌 180 g all-purpose flour 40 g cocoa powder (unsweetened) 180 g sugar (or 150 g if apples are very sweet) 1 tsp baking powder ½ tsp baking soda Pinch of salt 1 tsp cinnamon (optional but so good) 1/2 tsp cardamom 70 g dark chocolate (chopped) 1-2 tbsp brown sugar for sprinkling before baking Ingredients Wet:📌 2 eggs 120 ml milk (or oat milk) 100 ml oil (or 90 g melted butter) 1 tsp vanilla extract 1 tbsp lemon juice or vinegar (helps activate soda) Apples:📌 250–300 g), peeled & diced 1 tbsp sugar (for tossing) Instructions:📌 Prepare apples: Toss diced apples with 1 tbsp sugar and set aside. Prepare the chocolate: Chopped the chocolate and set aside Mix wet ingredients: Whisk eggs, sugar, oil, milk, and vanilla until smooth. Add lemon juice. Mix dry ingredients: In another bowl, sieve flour, cocoa, baking powder, baking soda, salt, cardamom, and cinnamon. Combine: Add dry to wet. Mix gently until just smooth. Fold in ½ of the apples and all the chocolate Assemble: Line a 9-inch baking pan with parchment paper Pour batter into the lined pan. Spread the remaining apples on top for a beautiful rustic look. Bake: Bake at 175°C for 50–55 minutes Toothpick should come out with moist crumbs (not wet). Cool & serve: Let it cool for 15 minutes. Dust with cocoa + powdered sugar Enjoy with your favorite drinks!
