Apple season is in full swing here, and I have been fortunate enough to receive baskets of apples from family and friends. In this cozy countryside vlog, I bake a classic apple cake, prepare spiced apple jam, and make fresh apple juice. 🍎 Later, I enjoy a peaceful afternoon by the nearby lake with our Fox Terrier, Hilma. While I take a walk with Hilma, my husband goes fishing and catches a beautiful rainbow trout. 🐟 Once we’re back home, I clean the fish and cook one fillet for lunch. I season the other fillet with salt and rum for gravlax. Even the bones are put to good use; I boil them and give the tender fish meat to Hilma for her lunch. 🐾💛 Thank you so much for being here🌸💛 Sending a lot of hugs....💛 📌Classic Apple Cake📌 Ingredients:📌 6 medium-sized apples, red and green combination (peeled, cored, diced, or sliced thin) 2 tsp lemon juice 2 tbsp brown sugar 1 tsp lemon zest 200g brown or white sugar 120 ml vegetable oil (or melted butter for a richer taste) 2 large eggs 1 tsp vanilla extract 200g all-purpose flour 1 tsp baking powder ½ tsp baking soda 1 ½ tsp cinnamon ¼ tsp cardamom (optional) ¼ tsp salt 60 ml milk 50g coarsely chopped walnuts/pecans (optional) 2 tbsp Greek yoghurt Optional: 1 tsp cinnamon + 1 tbsp brown sugar for sprinkling on top Instructions:📌 1. Preheat the oven to 175°C. 2. Line a (9-inch) round cake tin or springform pan with parchment paper. 3. Toss apple pieces with lemon juice, lemon zest, and brown sugar, then set aside 4. In a mixing bowl, sift all-purpose flour. Add baking powder, baking soda, salt, cinnamon, and cardamom. Mix and set aside 5. In a large bowl, whisk together sugar, oil, eggs, and vanilla until smooth and creamy. Add Greek yoghurt and mix again. 6. Add the dry mixture to the wet mixture in two parts, alternating with milk. Mix until smooth.💛 7. Gently fold in the apple, leaving a few pieces for the topping. Add coarsely chopped walnuts/pecans and fold until well combined. 8. Pour the batter into the pan. Evenly distribute the remaining apple pieces on top of the batter. Sprinkle cinnamon and brown sugar. 9. Bake for 45–55 minutes. 10. Remove the cake from the oven and let it cool down completely before transferring it to the serving dish. Dust a bit of powdered sugar. 11. Serve with your favorite drinks.
