It all begins at home, where I bake a flan cake for an afternoon snack. Then, my husband, our dog Hilma, and I travel to our favorite rustic forest cottage to celebrate Finnish Midsummer. Our cottage feels like stepping back in time, nestled deep in the forest, surrounded by nature, with a serene river and a traditional sauna nearby. We cook delicious meals over the fire, enjoy the quiet beauty of the forest, and spend quality time together. The next day, we bond with family, go fishing on the lake, catch fresh fish, and cook our dinner at the cottage. We end the day with a relaxing sauna and peaceful sleep under the Finnish summer sky.🌞✨ 📌Flan Cake📌 Ingredients: Flan📌 4 eggs 225g condensed milk 280 ml fresh milk 1 tsp vanilla extract Ingredients: Sponge Cake📌 3 egg yolks 40g sugar Combine until light and fluffy 45 ml oil 45 ml milk 1 tsp vanilla extract 100g all-purpose flour 1 tsp baking powder 1/4 tsp salt 3 egg whites 1 tsp fresh lemon juice 50g sugar Ingredients: Caramel Syrup📌 150g of sugar Instructions: For the Flan: 📌 1. In a mixing bowl, place the eggs, add condensed milk, fresh milk, and vanilla extract. 2. Combine until all the ingredients are well incorporated, then set aside. Instructions: For the Sponge Cake:📌 1. In a mixing bowl, place egg yolks and 40g of sugar. Combine until light and fluffy 2. Add oil, milk, and vanilla extract. Combine well. 3. Sift together all-purpose flour, baking powder, and salt. Mix until smooth (do not overmix) 4. In another mixing bowl, whip the egg whites and fresh lemon juice. 5. When it's foamy, gradually add 50g of sugar, beat until stiff peaks form 6. Gently fold a dollop of the egg white mixture into the base mixture. 7. Add the combined mixture to the remaining whipped egg whites. Continue folding until the batter is smooth, then set aside. Instructions: For the Caramel Syrup:📌 1. Heat a pot or pan over medium heat and add 150g of sugar. 2. When the sugar melts, reduce the heat, swirl the pot, and let it cook until the color turns amber. Final Instructions:📌 1. Prepare an 8x3-inch cake pan by lining it with parchment paper, ensuring the paper covers the entire inside of the pan. Pour the syrup into the cake pan. 2. Pour the flan mixture into the cake pan through a sieve. 3. Then add the sponge cake batter 4. Place the cake pan in the hot water bath. 5. Bake at 170°C for 55-60 minutes, or until a toothpick inserted into the cake comes out clean. 6. Remove the flan cake from the oven and let it cool completely, then carefully flip the cake upside down and place it on the serving dish. 7. Slice the flan cake into your desired portions and enjoy it with your favorite drinks.
