I love having a quick pasta dish on hand for when I need to throw something together in a hurry. This is one of the tastiest and easiest mushroom pastas, and it's made without cream. Yet it's creamy and cheesy all on its own, thanks to the combination of starchy, hot pasta water and freshly grated Parmigiano Reggiano. The rest of the dish is flavored with white wine, butter, shallots, and garlic!
